I am currently into single serve recipes. The single serve chocolate cake recipe was a hit and making a vanilla cake seemed only fitting. Now in saying this I must admit that I am not partial to either. I love a good cake, period.
This cake is fluffy and tender, the beauty about it is that it is ready in under 30 mins. The whole point about these easy and quick recipes is the fact that you don’t need a lot to make some thing delicious at home from scratch. Yes you could use a boxed mix to make the recipe but why would you when you already have all the necessary ingredients in your kitchen?

What ingredients do you need to make this Single serve vanilla cake?
To make this cake we need melted butter/oil, milk, yogurt, vanilla, vinegar, sugar, flour, pinch of salt, baking soda. I have topped the cake with a greek yogurt frosting that is made of greek yogurt and maple syrup.
What substitutes can you use to make this Single serve vanilla cake?
Milk & Yogurt –
To keep this recipe vegan you can use a dairy free milk and yogurt of your choice. I have made this recipe with almond milk and coconut yogurt (avoid using a strong flavored milk or yogurt or else it will over power the cake batter)
Vanilla –
Use the best you can get. I used vanilla extract but paste works well too. You could use one side of a vanilla bean as well. It is a vanilla cake so we need a good vanilla flavor here.
Flour –
You can use all purpose gluten free flour mix to make this a gluten free cake. I have tried this recipe with cake flour and it is amazing but you can use all purpose flour too.
Sugar –
The recipe uses castor or granulated sugar you can use brown sugar but it will change the color and taste of the cake. I would recommend using white sugar.

What equipment do you need to make this Single serve vanilla cake?
I have used a bowl and whisk to make this cake batter but a rubber spatula would work as well. The cake is baked in a 4 inch tin that is lined with baking paper. You could use a cupcake tray as well. However I would recommend checking the cupcakes after 15 minutes as they would bake faster than a 4 inch cake.
How to make this Single serve vanilla cake?
We start by preheating the oven to 180 ℃ and line a 4 inch tin with baking paper. In a small mixing bowl add the wet ingredients and whisk. Add the dry ingredients and whisk until smooth. Pour into the prepared tin and bake for 18-20 mins until golden and risen. You know the cake is ready when you poke a tooth pick into the center and it comes out clean. Let it cool down before decorating and serving.

How to serve this Single serve vanilla cake?
This cake can be served with a dusting of icing sugar, some fruit jam or even whipped cream. I topped this cake with sweetened greek yogurt and rainbow sprinkles.
How to store this Single serve vanilla cake?
It is a single serve recipe hence there shouldn’t be any leftovers, I know I didn’t have any but if you want to store the cake I would recommend using an air tight container and keeping it at room temperature on the kitchen counter for a day or in the fridge for up to 3 days. I wouldn’t recommend freezing this cake as it does dry out.

Single Serve Vanilla Cake
Equipment
- Mixing bowl
- Whisk
- 4inch Baking tin OR cupcake tray
- Rubber spatula
Ingredients
Cake
- 3 tbsp melted butter/oil
- 2 tbsp yogurt
- 2 tsp vanilla
- 3 tbsp milk
- 1/4 tsp vinegar
- 1/4 cup sugar
- 3 tbsp flour
- 1/4 tsp baking soda
Frosting
- 1/4 cup greek yogurt
- 1 tsp maple syrup
Optional
- Rainbow sprinkles
Instructions
To make the cake -
- We start by preheating the oven to 180 ℃ and line a 4 inch tin with baking paper.
- In a small mixing bowl add the wet ingredients and whisk. Add the dry ingredients and whisk until smooth.
- Pour into the prepared tin and bake for 18-20 mins until golden and risen. You know the cake is ready when you poke a tooth pick into the center and it comes out clean. L
- et it cool down before decorating and serving.
To make the frosting -
- Mix the ingredients together until smooth. Do not over mix the frosting as it will become runny.
Assembly -
- Top the cooled cake with the frosting and add sprinkles. Slice and serve.
Notes
- Don’t over mix the batter or else it will become dense once baked.
- You can frost the cake with whipped cream and fresh fruit too.
