Single Serve Jumbo Pumpkin Cookie (Copycat Crumbl Recipe)

This fluffy and chewy giant cookie is simple to make take less than 20 minutes to mix and bake. It is coated in cinnamon sugar to give the cookie a snickerdoodle flavor vibe. 

If you know anything about me, you must know that I love a good single serve dessert recipe. And this single serve jumbo pumpkin cookie is like a snickerdoodle who met a pumpkin cake and had a fling with a jumbo pumpkin whoopee pie. Sounds like a lot but I promise you this cookie has little bit for everyone in it. Chewy, soft, fluffy and sugary – not to mention PACKED with pumpkin puree and pumpkin spice. Also, my homemade pumpkin spice blend will sort you out for the season. 

Now this is very similar to a crumbl cookie I saw on TikTok as we don’t have Crumbl in the UAE I thought it was only fitting to recreate the cookie but with a single serve twist because honestly sometimes you just need to make, bake and eat one cookie. 

What is a single serve recipe?

Single serve recipes are those that serve 1-2 people. They are usually measured in smaller amounts, use fewer ingredients and takes up lesser time to make. I have a list of single serve recipes that are very easy to make and approachable, make sure to check them out. 

What is a pumpkin cookie?

There are a variety of pumpkin cookies and bars recipes. This one is a combination of a pumpkin whoopee pie, snickerdoodle and chewy pumpkin cookie that is packed with pumpkin puree and pumpkin spice. I like using brown butter to make the recipe but you can use melted butter however I think brown butter adds a delicious flavor to the recipe. The cookie is rolled in a cinnamon sugar to give it the snickerdoodle flavor.

What ingredients do we need to make this single serve jumbo pumpkin cookie?

To make this cookie we need, melted butter or browned butter, pumpkin puree, brown sugar, vanilla, all purpose flour, baking soda, pumpkin spice, salt. I have rolled the cookie dough in cinnamon powder and castor sugar before baking. 

What equipment do we need to make this single serve jumbo pumpkin cookie?

To mix the cookie dough we need a small mixing bowl and rubber spatula. We also would need a small sauté pan if you are browning the butter, alternatively melt the butter in a microwave. The cookie dough is rolled in cinnamon sugar in another bowl and baked in a lined baking tray with parchment paper in the oven. I like allowing the cookie to cool over a wire rack.

How to make this single serve jumbo pumpkin cookie?

Preheat the oven to 350℉ and line a baking tray with parchment paper, set aside. In a small mixing bowl add the brown butter, pumpkin puree, brown sugar, vanilla and stir until smooth. Add the flour, baking soda, salt, pumpkin spice and stir until combined. The dough will seem sticky which is fine. In another bowl add the cinnamon powder and sugar, stir until combined. Scoop the soft dough into your hands and create a rough ball, drop into he cinnamon sugar and roll around until coated. Transfer to the lined baking tray and bake in the oven for 14 minutes or until risen, dry to the touch on the outside and if you press it – the cookie is still soft. Allow to cool on a wire rack and serve warm with a glass of cold milk. 

Serving and storing this single serve jumbo pumpkin cookie?

The best way to serve this cookie is warm, fresh out of the oven. It is delicious on its own but you can make it a dessert and serve it with vanilla ice cream. Alternatively instead of making 1 jumbo cookie you can make 2 smaller cookies and bake them for 12 minutes, add ice cream into the center and make an ice cream sandwich. Pair it with a glass of cold or my pumpkin spice latte or any tea of your choice. Single serve recipes most often than not have no leftovers which means there shouldn’t be any storage but if you don’t finish the cookie in one sitting then store the cookie in a zip lock bag at room temperature up to 3 days.

Ingredients
  

  • 1 tbsp brown butter
  • 2 tbsp pumpkin puree
  • 2 tbsp brown sugar
  • 1/4 tsp vanilla
  • 3 tbsp flour
  • 1/8 tsp baking soda
  • 1/8 tsp pumpkin spice
  • Pinch of salt
  • Cinnamon sugar: 1 tbsp castor sugar + 1/2 tsp cinnamon powder

Instructions
 

  • Preheat the oven to 350℉ and line a baking tray with parchment paper, set aside.
  • In a small mixing bowl add the brown butter, pumpkin puree, brown sugar, vanilla and stir until smooth.
  • Add the flour, baking soda, salt, pumpkin spice and stir until combined. The dough will seem sticky which is fine.
  • In another bowl add the cinnamon powder and sugar, stir until combined. Scoop the soft dough into your hands and create a rough ball, drop into he cinnamon sugar and roll around until coated.
  • Transfer to the lined baking tray and bake in the oven for 14 minutes or until risen, dry to the touch on the outside and if you press it - the cookie is still soft.
  • Allow to cool on a wire rack and serve warm with a glass of cold milk.

Notes

  • Browning 1 tbsp butter can be a little stressful as it can burn easily, so I wouldn’t take my eye off the pan while doing it.
  • Do not over mix the dough or else it will make the cookie dense and tough
  • Do not over bake the cookie as it will firm up as it cools down. No longer than 15 minutes.
  • You do not have to coat the cookie in cinnamon sugar but I think it adds a delicious snickerdoodle flavor.
