The ONLY everything bagel seasoning recipe you need, filled with black and white sesame seeds, garlic, onion, salt, onion seeds, pepper and cayenne pepper. This is not your average seasoning, use it over eggs, fish, chicken or avocado toast.
You can take the girl out of India but you cannot take the Indian out of the girl. Now, I love everything bagel seasoning as it is. It is mad expensive to buy and I decided to make a batch myself at home. I didn’t have access to poppy seeds (IYKYK) so I got the idea to make a few additions to the classic and make it my own but surprisingly better.
This seasoning what you find on top of bagels. Hence everything BAGEL seasoning. However, the seasoning is so good, you can buy it independently in bottles, packets and containers from stores. It was popularised in New York when bakers would allow you to choose the toppings fr your bagels before baking. Today everything bagel seasoning is considered to be a little sprinkle of New York over your recipes. It is made up of black and white sesame seeds, poppy seeds, dried onion, garlic flakes, salt. There are many variations to the recipe, having said that I added a little twist to the recipe as well.
It tastes like garlic, onion, salt – it is crunchy. The seeds add a nutty and earthy taste to the seasoning mix. The variation of spices/ingredients in this recipe will alter the original flavor.
Honestly, you can use it over anything, I love it over bagel and cream cheese, or buttered toast, baked beans, avocado, add it over grilled chicken for added flavor, sprinkle it over steamed fish and mashed potatoes too. You can serve it with anything you like. I love it with garlic bread too.
The recipe starts off innocently with white and black sesame seeds, black onion seeds, garlic flakes/granules, dried or fried onion and salt. The spice addition here is black pepper and cayenne pepper powder. The onion seeds add more crunch but also a yummy onion flavor, more than the usual. We use crushed black pepper which is great for texture but it hit much more when you get it in your mouth. Also, the cayenne pepper powder is a small amount but a little hint of it adds spice to the mixture that is warming. You can add chili flakes as well.
We need a sauté pan with a rubber spatula to toast the ingredients together. You could do this in the oven on baking tray lined with parchment paper. We need an air tight container to store the mixture once it is cooled, it must be air tight or else the mixture will loose its crunch if moisture enters it.
In a sauté pan on low heat add the white sesame seeds, black sesame seeds, onion seeds and lightly toast until you can smell them in the air, around 1-2 minutes. If you are using dried onion you can add them in this step. Once you can smell the seeds, add the garlic, crushed black pepper and fried onion – toast for 30 seconds stirring, take of the heat and allow the mixture to cool in the pan, stir it every now and then. After its cooled down, add the salt, cayenne pepper and stir together. Transfer to a glass air tight jar and store in a dry place for months.
It can best stored in the air tight jar for up to 6 months – I usually make a large batch which keeps for at least 3 months. It must be stored at room temperature and in an air tight container or else it will get soft and the crunch is one of its main characteristics.
