Apple Pie Oatmeal Recipe

Creamy oatmeal with cinnamon spiced sautéed apples and toasted hazelnuts. A little maple syrup and it is the perfect fall breakfast recipe to cook up which happens to be healthy and simple to make.

Equipment

  • Small sauce pot with lid
  • Sauté pan with lid
  • Rubber spatula
  • Knife & chopping board

Ingredients
  

For the apples:

  • 1 red apple
  • 1/2 lemon juice
  • 1/4 tsp cinnamon powder
  • Pinch of salt
  • 1/4 cup water
  • 1/2 tsp vanilla

For the oatmeal:

  • 1/2 cup instant oats
  • 3/4 cup water
  • 1/4 cup milk
  • Pinch of salt

Serving:

  • More cinnamon
  • 1/4 cup toasted hazelnuts
  • Maple syrup

Instructions
 

To make the apples:

  • Peel, core and dice the apples. Transfer to a sauté pan and place on low to medium heat.
  • Add the lemon juice, vanilla, salt, cinnamon and water, cover and cook for 5 minutes - stirring every now and then or until softened.

To make the oatmeal:

  • Add the oats into the sauce pot and top with water, milk, salt.
  • Place on low heat and cook for 5 minutes or until bubbling and soft. If it is too thick add more liquid if it is too thin add 1 tbsp more oats and continue cooking.

Serving:

  • Pour the oatmeal into the bowl, top with the sautéed apples, more cinnamon and toasted hazelnuts. Drizzle over the syrup and enjoy warm.

Notes

  • I like cooking my oats on low heat with lid so it gets creamy and breaks down the oatmeal.
  • Alternatively you can serve it with my apple pie syrup
  • Add more liquid into the oatmeal if it is too thick, add 1 tbsp more oats into the oatmeal if it is too thin
