Creamy oatmeal with cinnamon spiced sautéed apples and toasted hazelnuts. A little maple syrup and it is the perfect fall breakfast recipe to cook up which happens to be healthy and simple to make.
Peel, core and dice the apples. Transfer to a sauté pan and place on low to medium heat.
Add the lemon juice, vanilla, salt, cinnamon and water, cover and cook for 5 minutes - stirring every now and then or until softened.
To make the oatmeal:
Add the oats into the sauce pot and top with water, milk, salt.
Place on low heat and cook for 5 minutes or until bubbling and soft. If it is too thick add more liquid if it is too thin add 1 tbsp more oats and continue cooking.
Serving:
Pour the oatmeal into the bowl, top with the sautéed apples, more cinnamon and toasted hazelnuts. Drizzle over the syrup and enjoy warm.
Notes
I like cooking my oats on low heat with lid so it gets creamy and breaks down the oatmeal.
