Dahi Toast (Baked yogurt bread)

Crunchy toast filled with a sweet yogurt custard that is baked until just set. Top with nuts and powdered sugar before slicing and serving warm. A simple recipe but delicious and its ready in under 20 minutes.

Equipment

  • Mixing bowl
  • Whisk
  • Baking tray
  • Parchment paper

Ingredients
  

  • 4 slices bread
  • 4 tsp nuts

Yogurt custard

  • 1/4 cup yogurt
  • 1 small egg
  • 1/2 tsp vanilla
  • 1/2 tsp lemon zest
  • Pinch of cardamon powder
  • Pinch of salt

Garnish

  • Powdered sugar

Instructions
 

  • Preheat the oven to 180℃. Line a baking tray with parchment and set aside. Place four slices of bread the tray and using your fingers press the center of the bread down firmly. Leave a boarder around the edges of the sides, you should have a little well in each slice.
  • In a small bowl add the ingredients for the yogurt custard and whisk until smooth. Spoon the custard into the four slices of bread evenly.
  • Top with nuts and bake for 7-8 minutes until the custard is set an the bread is toasted, golden brown.
  • Remove from the tray, dust with icing sugar and cut into triangles. Serve it while warm.

Notes

You can make this over the STOVE -
The yogurt taste can be baked over the stove in a sauté pan with a lid. The flame must be kept low and the lid must fit the pan. The steam created will allow the custard to set and “bake” while the direct heat from the pan will toast the bread from the bottom. We cook it for 4 mins on the lowest heat with the lid and another 4-5 minutes without the lid on the lowest heat possible.
