Equipment

  • Mixing bowls
  • 5 inch round tin
  • Whisk
  • Rubber spatula
  • Butter knife
  • Plate

Ingredients

For the chocolate cake -

  • 2 tbsp yogurt
  • 2 tbsp milk
  • 2 tbsp oil
  • 1/4 tsp vinegar
  • 2 tbsp brown sugar
  • 1/2 tsp baking soda
  • 2 tbsp flour
  • 1 tbsp cocoa powder
  • Pinch of salt

For the buttercream frosting -

  • 3 tbsp butter unsalted
  • 9 tbsp powdered sugar
  • 1 tsp vanilla
  • 1 tsp milk
  • Rainbow nonpareils

Instructions

For the cake -

  • Preheat the oven to 180℃, line a 5 inch baking tin with baking paper and brush with oil. Set aside.
  • In a small bowl add the wet ingredients and mix until combined. Add the dry ingredients and stir until smooth.
  • Pour into the prepared tin and bake for 15-18 minutes until risen and tooth pick inserted into the center comes out clean or with moist crumbs. Remove from the tin and let it cool completely before frosting.

For the buttercream frosting -

  • Whip the butter with a whisk in a bowl until pale, light, creamy and fluffy. Add the vanilla, powdered sugar and whisk again until smooth.

Assemble -

  • Transfer the cooled chocolate cake to a ramekin making sure it fits snuggly into the mould, spread over the frosting and even it out with a knife.
  • Add the sprinkles on top with a spoon making sure to cover the surface generously. Serve with a spoon and enjoy.

Notes

  • Let the cake cool completely before frosting or else it will melt off.
  • I like to freeze the cake once frosted for 20 minutes before adding the sprinkles on top to ensure the color doesn’t bleed into the frosting easily.
