This classic lemon posset recipe creates a silky, creamy dessert using cream, sugar, and fresh lemon juice, the addition of fresh peaches makes it even more delicious. Simple, refreshing, fruity and foolproof. The perfect summer dessert recipe to make.
In a medium saucepan, combine the heavy cream and caster sugar. Place over medium heat and stir until the sugar dissolves completely. Bring the mixture to a gentle boil and let it simmer for 3 minutes, stirring occasionally.
Remove the saucepan from the heat and stir in the fresh lemon juice and peach puree. Mix well until fully combined. Allow the mixture to cool for 5 minutes.
Pour the warm mixture into serving glasses or into hollowed out lemons/peaches.
Transfer to the refrigerator and chill for at least 4 hours, or overnight, until set.
Serve cold straight from the fridge. Garnish with extra peach slices, lemon zest, or fresh mint if desired.
Notes
Make sure the cream is simmering before you take it off the heat as if this is missed, the cream won’t set as it chills.
Fresh lemon juice is essential for helping the posset set properly.
The posset will continue to firm up as it chills.
This dessert can be made up to 2 days in advance, making it perfect for entertaining.
I like serving the possets in the shell of the lemon and I also like hollowing out the peaches and setting the posset in it. You could just set the dessert in glasses or bowls.
