Can I use bottled lemon juice?

Can I use lime instead of lemon?

Ingredients
  

  • 200 ml whipping cream
  • 100 g peaches purred in a blender
  • 2 lemons zest and juice
  • 50 g caster sugar

Instructions
 

  • In a medium saucepan, combine the heavy cream and caster sugar. Place over medium heat and stir until the sugar dissolves completely. Bring the mixture to a gentle boil and let it simmer for 3 minutes, stirring occasionally.
  • Remove the saucepan from the heat and stir in the fresh lemon juice and peach puree. Mix well until fully combined. Allow the mixture to cool for 5 minutes.
  • Pour the warm mixture into serving glasses or into hollowed out lemons/peaches.
  • Transfer to the refrigerator and chill for at least 4 hours, or overnight, until set.
  • Serve cold straight from the fridge. Garnish with extra peach slices, lemon zest, or fresh mint if desired.

Notes

  • Make sure the cream is simmering before you take it off the heat as if this is missed, the cream won’t set as it chills.
  • Fresh lemon juice is essential for helping the posset set properly.
  • The posset will continue to firm up as it chills.
  • This dessert can be made up to 2 days in advance, making it perfect for entertaining.
  • I like serving the possets in the shell of the lemon and I also like hollowing out the peaches and setting the posset in it. You could just set the dessert in glasses or bowls.
