Ingredients
110gm Buttermelted
200gm Light brown sugar
1Egg
1tspVanilla
1/2tspBaking powder
Pinchof Salt
130gm Flour
80gm Peanut butter chips
9Jam sandwich biscuits
Instructions
Preheat the oven to 180℃, line your 9x9 square tin with baking spray and baking paper.
In a large bowl add the brown sugar and melted butter. Whisk together until combined. Add the egg, vanilla and whisk vigorously until pale in color.
Add the flour, baking powder and salt into the batter and fold together using a spatula until almost combined. Add the peanut butter chips and fold through completely.
Pour batter into he prepared tin, even it out and add the jam sandwich biscuits on top. Bake in the oven for 20-22 mins until the top is set and shiny. When you poke a knife in the center you will get moist crumbs which is fine.
Let it cool for an hour before cutting and serving.
Notes
Do not over mix the batter once you add the flour.
You can add as many jam sandwich biscuits as you like, I like one biscuit on each piece and hence I use 9 biscuits for 9 pieces.
Do not over bake the blondies. They will set as they cool down.
