These little squares are filled with peanut butter chips and topped with a jam sandwich biscuit. They are chewy, soft and crunchy all in one bite. Very simple recipe and super quick dessert for valentines day.
Blondies are basically the sister of brownies. Well that is what I believe at least, even though it might not be true! They mainly have the same ingredients to a fudge brownie except the cocoa making for a light colored bar. The color comes from the sugar you use, hence if you use light brown sugar it will have a beautifully pale light brown color. While if you use dark brown sugar it will look similar to a brownie. Having said this the recipe is very simple to make doesn’t require any fancy ingredients or equipment to put together.

What ingredients do you need to make these Quick V-Day Blondies?
To make the blondies we need the usually suspects to start off with, eggs, butter, soft brown sugar and flour. We do add some vanilla and peanut butter chips to create the peanut butter jelly flavors. The recipe calls for baking powder to give it a little lift. I top the blondies before they bake with a jam sandwich biscuit, I used Jammie dodgers here. That is it, literally on of the simplest dessert bar recipes you will make and the quickest.

What substitutes can you use to make these Quick V-Day Blondies?
Eggs –
I have made this recipe using flaxseed eggs and they work well. You could also use egg replacer powder and follow the package instructions for how to use it.
Light brown sugar –
I have used soft brown sugar in this recipe, you can use dark brown sugar as well but this will change the flavor and the color. If you use white sugar the color will be lighter in color. But the light brown sugar adds a mild caramel flavor to the blondies which is perfect.
Butter –
I have used a salted butter here so I didn’t salt my batter, you cause unsalted butter or even a vegan butter to make this recipe. You cannot use nut butters to make the blondies. The butter must be melted.
Flour –
I used all purpose flour to make this recipe but you can use cake flour, self raising flour or gluten free flour mix to make this recipe gluten free.
Peanut butter chips –
If you can’t get peanut butter chips, use peanut butter cups that have been chopped up. Butterscotch chips also work in this recipe. You could use white chocolate chips or even chunks. I would stay away from dark chocolate chips as this will change the color of the batter as it bakes.
Jammie Dodger –
I used Jammie dodger biscuits on the top but Jim Jam will also work. Any jam filled biscuit will work in this recipe.

What equipment do you need to make the Quick V-Day Blondies?
We need a large mixing bowl, a whisk to start the mixing process and a spatula. I bake them in a 9×9 square tin that is lined with baking spray and baking paper. A sharp knife is essential to cut into these fudgy bars.
How to make these Quick V-Day Blondies?
In a large bowl we add the sugar and butter. It is whisked together until combined. We then add the egg, vanilla and whisk again until the mixture is incorporated well. It will get paler in color as you whisk it. Add the flour, baking powder and salt (if the butter is unsalted) and flour together until almost combined. Add in the peanut butter chips and stir together until no flour pockets. Line your 9×9 inch square tin and dump the batter into the tin. Level it out and top the batter with jam sandwich biscuits. Bake for 20-22 mins until the top is just set and shiny.

How to Serve and store the Quick V-Day Blondies?
Once the blondies have cooled completely I cut them into large squares, wiping the knife down after every slice to ensure I get clean slices. Serve with milk or coffee/tea. I also love serving them with a scoop of coffee ice cream or vanilla ice cream. Once they are baked they can be stored in an air tight container for 4-5 days at room temperature. The longer you keep them the more they dry out.

Quick V-Day Blondies
Equipment
- 9x9 square tin
- Baking paper
- Large mixing bowl
- WhiskSpatula
Ingredients
- 110 gm Butter melted
- 200 gm Light brown sugar
- 1 Egg
- 1 tsp Vanilla
- 1/2 tsp Baking powder
- Pinch of Salt
- 130 gm Flour
- 80 gm Peanut butter chips
- 9 Jam sandwich biscuits
Instructions
- Preheat the oven to 180℃, line your 9x9 square tin with baking spray and baking paper.
- In a large bowl add the brown sugar and melted butter. Whisk together until combined. Add the egg, vanilla and whisk vigorously until pale in color.
- Add the flour, baking powder and salt into the batter and fold together using a spatula until almost combined. Add the peanut butter chips and fold through completely.
- Pour batter into he prepared tin, even it out and add the jam sandwich biscuits on top. Bake in the oven for 20-22 mins until the top is set and shiny. When you poke a knife in the center you will get moist crumbs which is fine.
- Let it cool for an hour before cutting and serving.
Notes
- Do not over mix the batter once you add the flour.
- You can add as many jam sandwich biscuits as you like, I like one biscuit on each piece and hence I use 9 biscuits for 9 pieces.
- Do not over bake the blondies. They will set as they cool down.
