Equipment

  • Mixing bowl
  • Whisk
  • Rubber spatula

Ingredients

  • 120 ml heavy cream
  • 60 gm smooth peanut butter runny

Optional

  • More peanut butter
  • Sea salt flakes

Instructions

  • We start by making sure our peanut butter is runny, if not, place it in the microwave for 15 seconds until runny.
  • In a bowl add the heavy cream and beat with a whisk until thick and doubled in volume. We want stiff peaks as once we add the peanut butter it will loosen up.
  • Pour the peanut butter into the whipped cream and fold together, do not over mix. Once combined transfer to a plate and smooth out the top.
  • Drizzle over more peanut butter and place in the fridge for 25 minutes minimum.

Notes

  • You HAVE to chill this mousse before serving
  • Serve with sliced bananas and toasted peanuts for the ultimate comfort dessert
