Single Serve Peanut Butter Mousse

This is my 2 ingredient peanut butter mousse recipe with creamy peanut butter and whipped cream. A little maple syrup and sea salt is optional but this dessert is ready in under 30 mins!

So when I ask if you are looking for a simple dessert and then proceed to show you this recipe – you must understand that I come from a space of peace and love. It is simple to make, yes. But it also needs only 2 ingredients. You can totally jazz it up with additions but honestly you don’t need much to make it taste good. There are very few way to mess this one up but we will go through all the details. 

You must know that this recipe is one of those that come through on a busy weeknight recipe or a sudden weekend gathering dessert. I have made this in so many variations and it is the BOMB! If you love peanut butter then this is the only recipe you will want to make. You don’t need an oven, no fancy equipment or ingredients just a little patience while it sets in the fridge. This recipe is naturally gluten free making a vey yummy sweet treat alternative for those who have allergies. 

What is a mousse?

A mousse is a cold dessert that is normally made with a stabilizing/setting ingredient such as egg or whipped cream. Depending on the recipe you are using, the method will vary. However all mousse recipes will tell you that it needs to set in the fridge before serving. If done right, it is light, airy and very delicious. 

What makes a mousse a mousse?

The light, airy and creamy texture is what makes a mousse a mousse. It is most often the not served sweet but you can serve it savory s well. It could be topped with whipped cream or a drizzle of some sauce. 

What is a single serve recipe?

Single serve recipes are those which serve a single portion. Most often than not, a single portion is 2 servings cause why not? They use small quantities of the ingredients and take little time to mix and prepare making them easier and more approachable. 

What ingredients do you need to make this peanut butter mousse?

We need peanut butter and whipping cream. I have used my favorite peanut butter here which is homemade, LOL! You can use any you prefer. If you are using a peanut butter that is more spreadable and less runny you must warm it in the microwave until it gets runny. If you want to make this vegan use a plant based heavy cream to make it, preferably soya so the flavor doesn’t alter the peanut butter. 

What equipment do you need to make this peanut butter mousse?

To beat the cream we need a whisk or an electric hand beater. You can use a stand mixer if you are going to increase this quantity. I prefer using a whisk. To set the mouse I have used a shallow plate but this mousse sets beautifully in a glass or a bowl in the the fridge. 

What add ons can you add into this peanut butter mousse recipe?

I like adding crushed salted toasted peanut on top for crunch, you could also drizzle the top with more runny peanut butter. A little grated dark chocolate adds a snickers like flavor to the mousse. You can also use fresh raspberries and this makes it taste like peanut butter and jelly mousse. My favourite option has to be slicing fresh bananas on top cause I LOVE peanut butter and bananas. How to make this peanut butter mousse recipe?

We start by making sure our peanut butter is runny, if not, place it in the microwave for 15 seconds until runny. In a bowl add the heavy cream and beat with a whisk until thick and doubled in volume. We want stiff peaks as once we add the peanut butter it will loosen up. Pour the peanut butter into the whipped cream and fold together, do not over mix. Once combined transfer to a plate and smooth out the top. Drizzle over more peanut butter and place in the fridge for 25 minutes minimum. 

How to serve this peanut butter mousse recipe?

Serve this mousse chilled with a little sprinkle of sea salt on top. There are no wrong ways to serve this mousse, I would suggest 

How long can you keep mousse in the fridge?

This recipe can be stored in the fridge for 2 days. I would cover the top with cling wrap or a lid to ensure the Edges don’t dry out. I have stored this in the fridge for up to 1 week but the light, fluffy and airy texture looses it volume hence I wouldn’t suggest storing it longer than 2 days. 

What are the common mistakes and solutions when making mousse?

  1. Over mixing – Do not over whip your cream, this will make the mouse grainy and spilt the mixture. 
  2. Temperature of ingredients not right – Once you have warmed the peanut butter (to make it runny, if your peanut butter is runny skip this step) let it cool down a little before mixing with the cream. 
  3. Not whipping cream enough – Whip the cream to stiff peaks or else the mousse wont set.
  4. Not chilling the mousse – Allow the mousse to chill in the fridge for at least 25 minutes before serving.

Ingredients
  

  • 120 ml heavy cream
  • 60 gm smooth peanut butter runny

Optional

  • More peanut butter
  • Sea salt flakes

  • We start by making sure our peanut butter is runny, if not, place it in the microwave for 15 seconds until runny.

Notes

  • You HAVE to chill this mousse before serving
  • Serve with sliced bananas and toasted peanuts for the ultimate comfort dessert
