Single Serve Vanilla Cake

Fluffy and tender vanilla cake, prepared and baked in under 30 mins! An eggless sponge recipe that is perfect for one any day of the week.

  • 4inch Baking tin OR cupcake tray

Ingredients
  

Cake

  • 3 tbsp melted butter/oil
  • 2 tbsp yogurt
  • 2 tsp vanilla
  • 3 tbsp milk
  • 1/4 tsp vinegar
  • 3 tbsp sugar
  • 1/4 cup flour
  • 1/4 tsp baking soda

Frosting

  • 1/4 cup greek yogurt
  • 1 tsp maple syrup

Optional

  • Rainbow sprinkles

Instructions
 

To make the cake -

  • We start by preheating the oven to 180 ℃ and line a 4 inch tin with baking paper.
  • In a small mixing bowl add the wet ingredients and whisk. Add the dry ingredients and whisk until smooth.
  • Pour into the prepared tin and bake for 18-20 mins until golden and risen. You know the cake is ready when you poke a tooth pick into the center and it comes out clean. L
  • et it cool down before decorating and serving.

To make the frosting -

  • Mix the ingredients together until smooth. Do not over mix the frosting as it will become runny.

Assembly -

  • Top the cooled cake with the frosting and add sprinkles. Slice and serve.

Notes

  • Don’t over mix the batter or else it will become dense once baked.
  • You can frost the cake with whipped cream and fresh fruit too.
