3 Ingredient Chocolate Truffles

Soft and indulgent, these truffles are made with your favourite chocolate biscuit, cocoa powder and cream cheese. They are the perfect edible gift to make and a serious no bake snack recipe.

I make these truffles around February (valentines day) to be precise as they make for a delicious edible gift for your loved ones. I am well aware we are sitting gin the end of March, in my defense I had made this recipe last month with the intention to share it with you but I got so busy I didn’t get the chance to do it. So here I am deliciously late but you can absolutely make them for Easter or Eid as special gifts to make and share with your loved ones. What are chocolate truffles?

Chocolate truffles are a French confectionery thats traditionally made with chocolate and cream, this is turned into a ganache. The ganache is set, scooped out and formed into balls before coating in different flavors and ingredients. It can be made with milk, dark, white chocolate or a combination of chocolates mixed with a variety of flavors as well. These chocolate truffles are different, they are not the same and are not traditional. We do not need to chill the mixture before shaping it as the biscuit crumbs create enough texture to hold the mixture together. 

What ingredients do you need to make these 3 ingredients chocolate truffles?

To make these truffles we need your favorite chocolate biscuit, I have used bourbon. You can use oreo, chocolate shortbread, etc. we also need a little cocoa powder (this is not essential but I love the bitter sweet element in these truffles) and cream cheese. Thats it. But I like coating the truffles with melted dark chocolate mixed with coconut oil – this creates a hard chocolate shell on the outside once set in the fridge. You can garnish them with sea salt flakes or sprinkles. 

What equipment do you need to make these 3 ingredients chocolate truffles?

To make the mixture we need a food processor, if you do not have one you can use any high speed food processor to grind the biscuits into a fine powder. Alternatively you can use a rolling pin to bash the biscuits into a fine powder. The mixture in rolled between your palms. If you are coating the truffles in melted chocolate then you will need a mixing bowl, fork and microwave. I place the coated truffles on a baking paper and allow them to set in the fridge until firm. 

How to make these 3 ingredients chocolate truffles?

In a food processor add the chocolate biscuits and process until it is a fine powder. Add the cocoa powder, cream cheese and process until well combined, it would form into a clump if you press the mixture together in your hand. Form the mixture into balls and roll between your palms firmly to create balls. This is optional but I like dunking them onto melted dark chocolate, using a fork tap out the excess melted chocolate and place on a sheet of baking paper. Top with salt or sprinkles of choice. Let them chill in the fridge for 30 minutes before wrapping or serving. 

Serving and storing these 3 ingredients chocolate truffles?

These are best served cold. I prefer them chilled but my dad loves them at room temperature. Serve them with coffee or tea and they make for a delicious snack, that is quick and simple. I also like these with a glass of milk to be honest. The leftovers can be stored in air tight containers in the fridge for up to 1 week. If you are gifting these away I would line the box with baking paper to ensure the base is covered well incase the outer chocolate coating melts a little.

Equipment

Ingredients
  

  • 15 bourbon chocolate biscuits
  • 75 g cream cheese
  • 15 g cocoa powder unsweetened

Optional

  • 100 g dark chocolate melted
  • 10 ml coconut oil
  • Sea salt flakes
  • Sprinkles

Instructions
 

  • In a food processor add the chocolate biscuits and process until it is a fine powder.
  • Add the cocoa powder, cream cheese and process until well combined, it would form into a clump if you press the mixture together in your hand.
  • Divide and portion the mixture into balls and roll between your palms firmly to create balls. This mixture should yield around 12 truffles.
  • This is optional but I like dunking them into melted dark chocolate mixed with coconut oil, using a fork tap out the excess melted chocolate and place on a sheet of baking paper. Top with salt or sprinkles of choice.
  • Let them chill in the fridge for 30 minutes before wrapping or serving.

Notes

  • You could also drizzle the truffles with melted dark chocolate instead of dunking them into the melted chocolate.
  • I like the addition of cocoa powder to create a rich and intense chocolate flavor in the truffles.
