Air Fryer Chocolate Chunk Cookie (single serve recipe)

Soft and fudgy these single serve air fryer chocolate chunk cookies are the best dessert recipe to bake up when you are craving a quick and easy sweet treat fix. Not to mention they are best served with a scoop of vanilla ice cream, sprinkle of sea salt flakes and drizzle of caramel sauce.

I developed this recipe for my cooking demonstration at Taste Of Dubai. We had to use a Black & Decker appliance in our recipe and I decided to showcase the fantastic and versatile air fryer which can literally bake anything! This single serve chocolate chunk cookie recipe is perfect to make 2 giant cookies or 4 smaller ones they are delicious as soon as they come out of the air fryer, hit them with sea salt flakes and it is a winning recipe! 

Let me be clear, I don’t use the air fryer a lot. In fact this is my first air fryer recipe and I am so thrilled that this recipe is the one I am inaugurating it with. Not because I love cookies but also because I LOVE COOKIES and I am so excited to make a cookie recipe that is is simple, feeds 1-2 people and the chances are you have the ingredients sitting in your kitchen at the moment. So let us get to the recipe. 

What are chocolate chunk cookies? How are chocolate chunk cookies different from chocolate chip cookies?

Chocolate chunk cookies are cookies made with chopped chocolate chunks as apposed to chocolate chips. It is made with butter, sugar, eggs, vanilla, flour, baking powder, baking soda, salt, chocolate chips/chunks. When you use chocolate chunks over chocolate chips in your cookies, you get chocolate puddles and pools once they are baked. It is subjective on how you like your cookies but I like then soft, chewy and packed with puddles of chocolate. 

What are single serve recipes?

Single serve recipes are those which serve a single portion. Most often than not, a single portion is 2 servings cause why not? They use small quantities of the ingredients and take little time to mix and prepare making them easier and more approachable. 

What ingredients do you need to make this single serve chocolate chunk air fryer cookie recipe?

To make this cookie we need melted butter or better yet brown butter, brown sugar, white sugar, an egg yolk, vanilla extract, flour, corn flour, salt, baking soda, chocolate chunks, halwa and sea salt flakes. I like serving this cookie with vanilla ice cream and a little caramel sauce with olive oil. You can use chocolate chips to make this recipe. Also you can use greek yogurt in place of the egg yolk to make the cookie dough eggless. If you have stress about making brown butter use regular melted butter. 

What equipment do you need to make this single serve chocolate chunk air fryer cookie recipe?

To make the cookie dough we need a mixing bowl, rubber spatula and baking paper. Obviously we have baked them in an air fryer. If you are using chocolate chunks like I have you will need to chop it using a chopping board and knife. Also to make the brown butter you need a sauce pot. 

How to make this single serve chocolate chunk air fryer cookie recipe?

In a mixing bowl add the melted/browned butter, brown sugar, castor sugar, vanilla and stir to combine. Add the egg yolk and stir well until incorporated. Add the flour, cornflour, baking soda, salt, chocolate chunks and mix until no dry pockets are visible. Add the halwa and briefly mix until combined. Divide the dough into two balls and bake in a lined air fryer basket for 10 minutes at 170℃. While it is baking let us make the caramel sauce by stirring tahini and maple syrup with vanilla together until smooth and thick. Once the cookie is done, remove from the air fryer and serve with a scoop of vanilla ice cream, drizzle of caramel, olive oil and sprinkle of sea salt flakes. 

Serving this single serve chocolate chunk air fryer cookie recipe?

This cookie is best served warm with a scoop of vanilla ice cream on top, topped with caramel, sea salt flakes and olive oil. However you can just eat it on its own while warm. When it just comes out of the air fryer it will be soft and I like using a spoon to eat it. The leftovers can be stored in an air tight container or a zip lock bag at room temperature for 3-4 days.

Ingredients
  

Cookie-

  • 3 tbsp browned butter
  • 3 tbsp brown sugar
  • 1 tbsp castor sugar
  • 1 egg yolk
  • 5 tbsp all purpose flour
  • 1 tbsp corn flour
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 tbsp crumbled halwa
  • 3 tbsp chocolate chunks

Caramel Sauce-

  • 3 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tsp vanilla

Serve with -

  • Sea salt flakes
  • Vanilla ice cream
  • Olive oil

Instructions
 

  • In a mixing bowl add the melted/browned butter, brown sugar, castor sugar, vanilla and stir to combine. Add the egg yolk and stir well until incorporated.
  • Add the flour, cornflour, baking soda, salt, chocolate chunks and mix until no dry pockets are visible. Add the halwa and briefly mix until combined.
  • Divide the dough into two balls and bake in a lined air fryer basket for 10 minutes at 170℃ - the beauty about this air fryer is that you don’t need to preheat it, so I baked it directly. If you air fryer needs preheating then do this in the beginning before you start making the dough.
  • While it is baking let us make the caramel sauce by stirring tahini and maple syrup with vanilla together until smooth and thick.
  • Once the cookie is done, remove from the air fryer and serve with a scoop of vanilla ice cream, drizzle of caramel, olive oil and sprinkle of sea salt flakes.

Notes

  • Do not over mix the dough or else the cookies will be dense.
  • The longer you bake the cookies the crispier and firmer they will get. I love underbaking them so they are still soft and perfectly chewy and fudgy.
