Apple Fritters

Fluffy apple cinnamon fritters that need only 4 ingredients to make. Flour, yogurt, apples and cinnamon. A little sugar goes a long way but if you have sweet apples you don’t need it. 

I made this magic dough recipe of flour and greek yogurt many years ago and was very impressed with the result. I had found the recipe online and it worked like a charm. This year I wanted to make some fritters but not the batter kind of fritters, I wanted to make the dough kind of fritters. All the recipes I came across needed time to let the dough proof etc. Which got me thinking, what if I used that dough to make these apple fritters?

What ingredients & equipment do you need to make these Apple Fritters?

The recipe starts with the dough that is all purpose flour and full fat yogurt. We then need red apples that are sweet, cinnamon powder and a pinch of salt. You can add sugar at this stage depending on how sweet the apples are. I would recommend using castor sugar or brown sugar to make these. I must admit, I like to dunk the fritters into a bourbon glaze that is icing sugar and bourbon. But it is optional, you could dust them with icing sugar or roll in cinnamon sugar if you prefer. 

We need a mixing bowl, a stock pot to fry the fritters, a knife and few spoons. 

Do you need full fat yogurt?

Yes the recipe calls for full fat yogurt or greek yogurt, these should fry into fluffy dumplings hence we need the fat in the dough to help it bind well but also stay fluffy once fried. If you wanted to make this vegan use a high fat vegan yogurt. I have tried making this with coconut yogurt and it was yummy. 

Do you need red apples?

I prefer red apples here as they are sweeter and not as firm. We want the apples to get softer when they fry up as this will make each apple chunk juicy and crispy with every bite. If you are using green apples make sure to add a little sugar into the dough as they can be very tart.

How to make these Apple Fritters?

We start by mixing the flour and yogurt together in a bowl until combined. You can do this in a stand mixer if you please but it isn’t a large amount of dough hence using your hands makes sense. Let the dough rest while you prep the apples.  Peel and cube a red apple, add cinnamon powder and salt into the apples and stir well. Flatten out the dough, add the chopped apples into the dough knead using your hands. The dough will not encase the apples but rather the apple will stud the dough evenly. Take your time with this step. Once it is well combined, cut into 6 pieces and roughly roll the pieces into a ball, the dough might get sticky as the apples might have already released its juices, that is normal. Cover the portioned dough and set it aside while the oil is getting hot. 

Once the oil is hot (add a little flour into the oil – it should sizzle and bubble up). Fry two fritters at a time for 2 mins on each side. Once the fritters are in the oil I reduce the heat a little. We want a deep brown color. Remove from the heat, transfer to a wire rack to allow the excess oil to drain off.

How to serve and store these Apple Fritters?

This is an optional step but you can mix icing sugar and bourbon until it is glaze consistency and dunk the fritters into the glaze. You could also dust the fritters with icing sugar or roll them into cinnamon sugar (sugar and cinnamon mixed). They are best served hot. Once they are made I wouldn’t recommend keeping them for long as they will get tough. Hence you rather make the dough ahead, portion it, cover and keep in the fridge until ready to fry. Let the dough come to room temperature and then fry as needed. You can freeze the dough as well.

Ingredients
  

  • 1 cup flour

  • 1 tbsp castor sugar
  • Pinch of salt

Optional:

  • 1/4 cup icing sugar
  • 1 tsp bourbon/milk

Instructions
