The TikTok viral no bake recipe by Elle Gibsonn with just dates, cocoa powder, oats, maple syrup, almond butter and dark chocolate. These healthy brownie balls are vegan, gluten free, delicious and so easy to make.
When I saw the original video about these brownie balls I thought to myself, how delicious can these be? I mean Elle made me believe that they were lip smacking but I still felt like I needed more assurance. Cut to a month later and I am seeing them everywhere on my TikTok. The FOMO started kicking in and I needed to get in on the action cause now I was definitely missing out.
So when, story time – made them the first time, they were very sticky cause I used medjool dates and soaked them in water so the mixture turned out to be wetter. BUT, when I say the taste was exceptional – I mean it was EXCEPTIONAL! I have made no bake brownies, the brownie bites as well so in my mind how much more good could these taste? BOY OH BOY THEY DID NOT DISAPPOINT! Then the second time I made these I used rolled oats and didn’t grind them into a powder first so they stayed gritty in the mixture. However, I have made a few tweaks to Elle’s original recipe which is PERFECT by the way and you must go watch her video first.
Elle Gibsonn is a social media influencer who shares vegan recipes online apart from other things. She has gone viral for her brownie balls which has gained over 3.4 million views. The recipe itself is a healthy treat but tastes decadent and so delicious. These brownie balls are filled with dates, cacao powder/cocoa powder, oat flour, maple syrup, almond butter and dark chocolate.
This recipe is trending for all the right reasons as they are so simple to make but very delicious as well, not to mention incredibly healthy and so good for you. In Elle’s video she makes these treats during her period as they are so satisfying and also craves all those binges during your cycle. However I must admit I have made these all through the month and they have been hitting the spot every single time.
Now to make Elle’s exact recipe, head to her video and page for the details which I have linked here. To make my version of these delicious brownie balls we need dates, cocoa powder (unsweetened), almond butter, maple syrup, oat flour, protein powder, salt, cinnamon, espresso powder, vanilla. To coat them we need dark chocolate, cocoa oil and sea salt flakes. Lets talk substitutes real quick: for the cocoa powder you can use any unsweetened cocoa or cacao powder you prefer. For the oat flour you can use almond flour or any nut flour of your choice. Instead of the almond butter you can use tahini, pistachio butter, cashew butter or sunflower seed butter as well. The protein powder makes these balls rich in protein, I have used a flavorless brand but you can use a chocolate or vanilla protein powder, alternatively you can substitute it with more oat flour if needed. The salt, cinnamon, vanilla and espresso powder might seem unnecessary but they really add a depth of flavor to the recipe. The dark chocolate is needed to coat the balls once they mixture is set, you can skip this if you like. If you do not have medjool dates, use any dates but soak them in water first as they would dry and not sticky enough to create the fudgy texture we need.
We need a food processor to mix the ingredients together. I would also suggest using a mini chopper to mix it as well. I have tried using a blender to make these and it is a little difficult as the mixture is not a wet mix and can be difficult to incorporate.
Add all the ingredients into the food processor (except for the dark chocolate, coconut oil and sea salt flakes. You want the mixture to form a sticky batter like dough consistency. Divide the mixture into 10 portions. Oil your palms and roll each portion into balls. Transfer to a plate lined with baking paper and repeat. Place in the freezer for 10 minutes. In the mean time, melt the chocolate in the microwave until smooth, add the coconut oil and stir together. Remove the brownie balls from the freezer and dunk each one into the melted chocolate, using a fork remove it and tap out any excess chocolate, sprinkle over the sea salt flakes and place in the same plate. Repeat until all are done. Place in the freezer again for 15 minutes or until set. Serve them fridge cold.
I love these with a glass of milk, check out my almond milk recipe for that. They are delicious fridge cold so remove them from the freezer, transfer to an air tight container and place in the fridge for up to 2 weeks. trust me they will not last that long. You could also serve them with tea or coffee, my dad loves them with coffee. It is the perfect breakfast bite on the go to give you energy or post/pre workout pick me up.
