An easy caesar salad recipe comes with an easier dressing. This recipe is so simple to make and very delicious – not to mention it is healthier and more wholesome filled with greek yogurt instead of mayonnaise and it tastes WAY BETTER!
With summer in full swing, light salads and fresh ingredients really help keep things cool. My Green goddess salad dressing is a favorite but this one is climbing the charts now. A classic caesar salad is definitely needed and one for the books. Having said this, a good caesar salad comes from its dressing. Like most salad recipes – a good salad consists of 5 main components: greens, sweetness, creaminess, crunchiness and dressing. And this dressing will make any boring salad, sandwich or toast taste delicious. I have been seeing a chicken caesar pizza video all over TikTok and it has been making crave caesar salad everything. So before we get into the variations of the recipe it seemed only fitting to make my caesar salad dressing recipe first.
While a classic caesar salad dressing is made with mayonnaise, I personally do not like the taste of mayonnaise in any of my sandwiches, salads or recipes. Which is why this dressing recipe is absolutely delicious and perfect if you are like me. If you do like mayonnaise you can use it and swap the greek yogurt out but don’t knock it till you try it in my opinion. Having said this the recipe does include canned anchovies and coming from an anchovy hater you do not taste it in this recipe but you actually get a nutty saltiness with it. Let us understand what is a caesar salad before we get to the dressing recipe.
A caesar salad is a salad made of green salad leaves like romaine lettuce/ baby gem lettuce, croutons, parmesan cheese, lemon juice and a classic caesar salad dressing. The most commonly. Served caesar salad variation is a chicken caesar salad recipe which is the addition of grilled chicken with the salad and dressing.
It is believed that the caesar salad was created by Julius Caesar himself. However there are documentations of it being recored in the early 1920s by Caesar Cardini – an Italian chef who owned a restaurant in Tijuana, Mexico.
As the original caesar salad recipe consists of mayonnaise, loads of cheese, oil and high amounts of salt, it doesn’t make for the “healthiest” salad option on the menu, however the recipe we are making is healthier, lighter and extremely delicious – not to mention lower in calories too.
Authentically Caesar salad dressing is made of coddled eggs, olive oil, mayonnaise, anchovies, salt, pepper, parmesan cheese, Italian herbs and lemon juice. This has changed over the years for chefs/restaurants to use a whole raw egg/egg yolk, mustard, assorted herbs etc in their dressing. Obviously you can find eggless versions which could be vegan as well. I have made an easier caesar salad dressing recipe that is lighter and healthier for you with Greek yogurt, anchovies, herbs, lemon juice, garlic, parmesan cheese, olive oil and seasoning.
As the recipe has been adapted to meet a variety of dietary requirements there are have been many variations to the original caesar salad recipe. You can find the salad served with any creamy ranch dressing a lighter vinaigrette dressing. These are not the traditional options but they are the options that can be used to adjust the nutrition content in the salad.
To make this dressing we need greek yogurt, canned anchovies, garlic, Italian herbs (I used oregano), lemon juice, parmesan cheese, black pepper powder and salt. I also like adding a little olive oil or the oil from the canned anchovies. The thicker the greek yogurt the creamier the caesar dressing. Alternatively you can use half mayo and half yogurt.
I used a small pestle and mortar to grind the anchovies but you can use a fork to smash it up. The garlic must be minced – I used a microplane grater for it. The dressing is made in a bowl with a form and whisk alternatively you can add all the ingredients into a small grinder and blend until smooth.
Start by grind the anchovies until its a paste – either in mortar and pestle or with a fork. Transfer to bowl and add the minced garlic, lemon juice Italian herbs, greek yogurt, olive oil, black pepper powder, parmesan cheese and whisk well until combined. Adjust the seasoning with salt as needed. Transfer to an air tight container and jar and store in the fridge for up to 1 week.
The dressing is delicious with a caesar salad but you can use it as a sandwich spread, over toast and add some ripe tomatoes. Mash it into boiled eggs to make a yummier eggs on toast. I also like using this easy caesar salad dressing recipe as a dip for carrots, celery, cracker or in your grazing platters. Toss it with cooked pasta and add leftover shredded chicken to make a quick and simple mid week meal.
Transfer the caesar salad dressing to a glass jar and store it in the fridge for 1 week. I would not recommend storing it any longer. Th flavor will get stronger as the days progress with minced garlic so adjust the seasoning as needed.
