Chicken caesar is a recipe that I am a sucker for. I have so many versions of the recipe on my blog because I absolutely love the flavors.when I saw this trend on TikTok, it only seemed fitting for me to jump right on but also make it my own. I prefer using toast breadcrumbs at the end as it stays crispy giving you the OG crunch from a caesar salad. The recipe is wonderful and so simple to prepare, making for a quick meal during the week. But also a convenient recipe for a lazy weekend. Sometimes when I want to amp up the protein in this I like adding cottage cheese/egg whites into the chicken mixture.

Authentically Caesar salad dressing is made of coddled eggs, olive oil, mayonnaise, anchovies, salt, pepper, parmesan cheese, Italian herbs and lemon juice. This has changed over the years for chefs/restaurants to use a whole raw egg/egg yolk, mustard, assorted herbs etc in their dressing. Obviously you can find eggless versions which could be vegan as well. Chicken caesar smash tacos are a twist on the classic chicken Caesar salad, tacos and smash burgers. They’re made by pressing seasoned ground or shredded chicken directly onto a tortilla, then cooking it until golden and crispy in a hot skillet. The tacos are topped with fresh romaine lettuce, creamy Caesar dressing, parmesan cheese, and crunchy toppings for the perfect mix of textures and flavors. The “smash” technique creates a thin, crispy layer of chicken that cooks quickly while adding plenty of savory flavor to every bite. Inspired by viral smash taco trends, this recipe combines the cheesy, garlicky flavors of Caesar salad with the crunch and comfort of tacos, making it an easy weeknight dinner or fun appetizer idea.

What makes smash tacos so crispy?

The secret to crispy smash tacos lies in the cooking. A thin layer of seasoned chicken is pressed directly onto the tortilla and cooked on a hot skillet, griddle or pan. As the tortilla cooks against the pan, it becomes golden and crunchy while the chicken develops a crust. Because the chicken is smashed into a thin layer, it cooks quickly and evenly, allowing more surface area to caramelize and crisp up. Using a hot pan, a little oil, and cooking the taco undisturbed for a few minutes helps create those crispy edges everyone loves. For even more crunch, I add parmesan cheese into the chicken mixture so as it cooks it crisps up even more, add the cold romaine lettuce and toasted breadcrumbs for that extra texture to every bite.

Ingredients you’ll need to make these chicken caesar smash tacos:

For the chicken mixture we need ground chicken, bread crumbs, parmesan cheese, dried oregano, garlic powder, salt and pepper. The tacos are made with mini flour tortillas and mozzarella cheese. We need romaine and ice berg lettuce for the salad with a caesar dressing, more parmesan cheese, lemon juice and seasoning. 

Best tortillas for smash tacos:

Ive used flour tortillas but you can use gluten free tortillas too, also feel free to use corn tortillas, they are the perfect accompaniment to these tacos. Corn tortillas are Amy absolute favourite when eating tacos but they aren’t always available hence flour will also do. 

Caesar dressing options and recipe:

I have a go to caesar dressing recipe that doesn’t use mayo or an egg but still tastes delicious, you can check it out here but also you can leave out the anchovies if you don’t like them. It is not a traditional recipe so please don’t hate, it is the recipe we use at home and absolutely love it. Also, you can buy your favorite caesar dressing and use that too.

To make these tacos we don’t need much, a mixing bowl for the chicken, I’ve used a fork to smash the chicken on the tortilla before cooking it. A sauté pan for cooking the tacos and a metal spatula to flip them. 

What to serve with chicken caesar smash tacos?

The best accompaniments for these tacos are fries, more salad, a crisp drink with something fizzy/bubbly. A simple cucumber and onion salad would also work well here, I personally love corn so a street side corn salad with avocado would be great as well. 

How to store the leftovers, can you make it ahead, best way to reheat smash tacos?

The leftover tacos can be stored in air tight containers in the fridge for a week. The salad is always good to store the leaves and dressing separate hence only mix the amount you will need. The dressing will keep well for 10 days in the fridge, when ready to eat drizzle it over the salad leaves. You can make the dressing ahead of time, prep the leaves ahead and mix the ground chicken together. When ready to serve assemble the chicken on the tortillas and cook. The best way to reheat these tacos are in a pan on the lowest heat, covered, to melt the cheese and crisp up the tortilla as well. Then add the salad and dressing as needed.

Ingredients

Chicken filling -

  • 500 g Ground chicken
  • 60 g breadcrumbs
  • 100 g parmesan cheese
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • Salt and pepper to taste
  • 12 mini tortillas
  • 200 g mozzarella cheese shredded

Salad -

  • 10-12 romaine and ice berg lettuce leaves shredded
  • 100 g toasted bread crumbs
  • 100 g parmesan cheese
  • 200 ml Caesar dressing
  • 1/2 lemon juice

Instructions

  • In a large mixing bowl add the ground chicken, breadcrumbs, parmesan cheese, garlic powder, oregano powder, salt and pepper. Stir well.
  • Add 2 tbsp worth of the chicken filling on a tortilla and spread it around to a thin even layer. Cook the taco, chicken side down on medium heat until golden and crispy - around 2-3 minutes. Flip the taco and cook for 1 minute to give the tortilla little color.
  • Add the shredded cheese into the taco and fold, cook in the saute pan folded for 1-2 minutes or until golden and the cheese is melting.
  • Open the taco, the cheese should be oozy, add the shredded lettuce, dollop over the dressing, finish with breadcrumbs, more parmesan and lemon juice. Serve immediately.

Notes

  • Do not over cook the tortilla as it will get very hard once taken off the heat. I still like my tacos to have a softness to it.

  • You don’t need to add the mozzarella cheese but it adds a delicious texture to the tacos once cooked.
