Easy Homemade Cosmic Brownies

These fudgy brownies are so rich, indulgent and delicious. They are simple to make, topped with a chocolate ganache and instead of decorating them with rainbow sprinkles I have gone halloween themed with little ghosts. It is the perfect treat for any occasion. 

First spooky season recipe of the year and it has to be brownies. I have been dreaming about these rich and indulgent fudge cosmic brownies for a while and it seemed only fitting to make them now. I decorated them with a halloween theme as opposed to the rainbow sprinkles on top. They are literally the best fudge brownies you will make and eat. Also they are so chocolatey!! You don’t need a lot to make these brownies and you most likely. Have all the ingredients in your pantry. Decorate them as you like and make them for any occasion to sweeten up the party. So let us get to it.

What is a cosmic brownie? What is a cosmic brownie made of? Why are cosmic brownies so good?

A cosmic brownie is a chewy and fudgy brownie topped with chocolatey icing then sprinkled with colorful candy-coated (sprinkle like) pieces to make it the perfect sweet treat. They are usually made with flour, cocoa powder, salt, butter, chocolate, eggs, sugar and then ganache is made with cream and chocolate – so what is not to like? They so indulgent and delicious with a glass of milk.

What ingredients do you need to make cosmic brownies?

To make these brownies we need butter, dark chocolate, eggs, sugar, vanilla, flour, cocoa powder, salt. For the ganache I have used whipping cream and dark chocolate with a little honey. instead of decorating with rainbow candy I have used melted white chocolate to create little ghosts. I have also used edible glitter but you can leave it out. 

What makes a brownie fudgy? How do you keep brownies fudgy? 

A good brownie is fudgy because of the ingredients quantities and preparation. Wee need a high ratio of fat with sugar and lower amount of dry ingredients. Along with this we beat allot of air into the eggs and sugar which helps while the batter is baking, making a shiny crust on top and a fudge interior. 

What equipment do you need to make cosmic brownies?

To make the brownies we need a mixing bowl, electric whisk and rubber spatula. I have baked the brownies in an 8×8 inch square tin lined with baking paper. The ganache is made in a bowl in the microwave. I like to use a sharp knife to cut the brownies once they are set. To make the white chocolate ghosts we need tooth picks and teaspoons. 

How to make cosmic brownies?

Preheat the oven to 180℃, line an 8×8 inch tin with baking paper and set aside. In a small mixing bowl add the butter and chocolate, heat in the microwave until melted. This took me around 1 minute, stirring every 20 seconds. Allow it to cool and set aside for now. In a larger mixing bowl add the eggs, sugars and vanilla, beat until pale, creamy and doubled in volume. This will take around 3-4 minutes (you can do this with a whisk as well). Add the cooled melted chocolate mixture into the eggs and whisk together. Add the flour, cocoa powder, salt and using a rubber spatula fold the dry ingredients into it. Pour the batter into the lined tin and bake for 22-25 minutes until the top is glossy and the inside is still soft, jam like consistency with a tooth pick test. Allow the brownies to cool a little while we make the icing. In a sauce pot add the cream and bring too a simmer. Take it off the heat and add the chocolate, honey and let it sit for a few minutes. Gently start stirring it together and once it is combined pour over the warm brownies, allow it to cool and set (around 2-3 hours at room temperature or in the fridge for 1 hour).

Decorating and serving cosmic brownies? 

Traditionally these brownies are decorated with rainbow candy which is thicker and fatter in comparison to sprinkles. It can also be decorated with large rainbow sprinkles as well. Once they are decorated, cut them with a sharp knife into squares, serve with milk.

How to make them halloween themed cosmic brownies?

I have turned these cosmic brownies into spooky season cosmic brownies with the addition of melted white chocolate on top to create little ghosts and a dot of dark chocolate to make eyes . You could also use candy melts to make this. They must cool down completely before slicing and serving. 

Storing cosmic brownies?

These brownies can be stored in air tight containers at room temperature for 4 days and in the fridge for up to 2 weeks. They are so good to warm up in the microwave for 10 seconds before eating. Don’t get me wrong I love them fridge cold as well.

Ingredients
  

For the brownies -

  • 150 gm butter
  • 120 gm dark chocolate
  • 120 gm brown sugar
  • 80 gm castor sugar
  • 1 tsp vanilla
  • 2 eggs
  • 95 gm flour
  • 20 gm cocoa powder
  • Pinch of salt

For the icing -

  • 60 ml whipping cream
  • 120 gm dark chocolate

For the little ghosts -

  • Melted white chocolate
  • Edible glitter

Instructions

Notes

  • Do not over bake these brownies as they are meant to be fudgy.
  • I you like cakey brownies bake them for a couple extra minutes.
  • If you are hot vibing with halloween just use rainbow candy to decorate them (like they originally are decorated).
