Easy Pumpkin Blondies Recipe

The easiest but tastiest fall dessert recipe with brown butter, pumpkin pie spice and pumpkin puree. It is a one bowl recipe that is chewy, fudgy and travel friendly too.

These pumpkin blondies are so simple to mix together, they are a great back to school treat and very delicious as well. To make this we need a few pantry ingredients but what makes it so good is the brown butter, pumpkin pie spice and the pumpkin puree. These blondies use whole eggs instead of egg yolks and we still achieve that fudgy and chewy texture on the inside. It is worthy mentioning that white chocolate or macadamia nuts would be a perfect combination here but I didn’t have enough. 

I am not a huge fan of blondies but the lemon blondie bars I have made are so simple and delicious that I thought I will definitely love making a pumpkin version and I think I love these just as much as the lemon ones. They are so good with a cup of black coffee or milk. Perfect as a snack but also travels well so you can bring them to dinners parties, picnics etc. I would suggest enjoying them warm fresh out of the oven. 

What is a blondie made of?

Blondies are a dessert bar that come under bars and slices in the pastry section of food. They are similar to brownies but completely different in flavor, the texture might be similar. They are made with brown sugar, instead of cocoa powder and can include white chocolate. They are baked in trays and cut into squares or rectangles.

Whats the difference between a blondie and a brownie?

Texture wise blondies and brownies might be similar. However flavor wise they are completely different. Brownies have to have cocoa powder, dark/milk/semi sweet chocolate in it. The blondie as a simple but subtle flavor, it may include white chocolate to maintain the color but it must have brown sugar as thats what gives it the caramel like fudge texture on the instead. 

How is a blondie different from a cookie?

A blondie is a type of cookie bar that may resemble a brownie but it doesn’t contain any cocoa. They mostly. Involve melted butter, brown sugar and egg yolks for they chewy, fudgy texture and caramel like molasses flavor. 

What are pumpkin blondies? 

Pumpkin blondies are basically a fudge blondie batter that is packed with pumpkin puree and pumpkin spice. It is seasonal and delicious just in time for autumn and fall. they. Have a devious crunch on top from the cinnamon sugar but they are soft and chewy on the inside. 

How should blondies look in the middle?

The top of the blonde should be dry on the top, it may have a shiny crust depending on the recipe and the center should still be a little soft. I would recommend under baking the blondies as they will have Tim etc cool down and firm up in the baking tray. 

What ingredients are needed to make the pumpkin blondies?

We need borrowed butter, brown sugar, egg, vanilla and almond extract, pumpkin puree, pumpkin pie spice, flour, baking soda, salt, white chocolate chips. I have topped the blondie batter with a cinnamon sugar that is cast sugar mixed with cinnamon powder. I would recommend adding white chocolate, pecans, walnuts, macadamia nuts etc. to add more flavor to the blondies. 

What equipment is needed to make the pumpkin blondies?

To make the pumpkin blondie batter we need a mixing bowl, whisk and rubber spatula. I have used a small space pot to brown the butter. The batter is baked in a 9×13 tray lined with baking paper, this makes a relatively. Thinner blondie I you want it thicker you can bake it in a 9×9 but that will increase the baking time by 5-10 minutes. I have sliced the blondies with a sharp knife once cooled. 

How to make the pumpkin blondies?

Preheat the oven to 180℃ and line a9x13 baking tray with baking paper, set aside. Brown the butter and allow it to cool a little while you collect the rest of the ingredients. In a large mixing bowl add the browned butter and brown sugar, whisk until combined. Add the egg, vanilla, almond extract and whisk until smooth and pale – around 2-3 minutes. Add the pumpkin puree and whisk until combined. Add the flour, pumpkin spice, baking soda, salt and chocolate. Switch to a spatula and fold everything together until evenly combined. Transfer the batter to a baking tray and top with more chocolate. In a small bowl mix castor sugar and cinnamon powder, sprinkle it over the blondie batter and bake for 20-25 minutes. Remove from the oven and let it cool completely before slicing. 

Serving and storing the pumpkin blondies?

These blondies are best served with black coffee (dads favorite) or milk, I would suggest serving them with whipped cream, vanilla ice cream or cinnamon powder as well to make it a complete dessert. You can add chopped pecans or walnuts on top with a drizzle of maple syrup. The leftovers can be. Stored in an air tight container at room temperature for up to 1 week. I have also stored them in zip lock bags in the fridge for 2 weeks.

Ingredients
  

  • 1 cup butter browned butter
  • 1 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 2/3 cup pumpkin puree
  • 2 3/4 cup flour
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup white chocolate

Topping

  • 2 tbs castor sugar
  • 1/2 tsp cinnamon powder

Instructions
 

  • Preheat the oven to 180℃ and line a9x13 baking tray with baking paper, set aside.

  • Bake for 20-25 minutes. Remove from the oven and let it cool completely before slicing.

Notes

  • Do not over bake these blondies or else they will get dry and not have a soft chewy texture.
  • You can use any add ons like walnuts,, pecans, milk chocolate, macadamia nuts etc.
