Grilled Cherry Tomato Caprese Salad with Crunchy Garlic

This classic Italian salad is filled all the fresh flavors of tomatoes, cheese, basil, balsamic vinegar and salt. The recipe uses grilled tomatoes, burrata cheese and crunchy garlic in olive oil for a delicious addition to the salad perfect for summer. 

I love a good salad. especially during summer when it gets really hot and you wan to eat something fresh, delicious and vibrant. This caprese style salad is going to be the your go to summer salad when you need a quick and easy fix. I must admit, this salad recipe requires little to no effort but the results are so rewarding. You can throw it together very simply on a weeknight when cooking seems labor some or when you are looking to impress over the weekend with little time to spare. So let us get to it. 

What is a caprese salad?

A caprese salad is an Italian salad made with tomatoes, fresh mozzarella cheese, sweet basil and seasoned with olive oil, balsamic vinegar, salt and pepper. It is commonly made by arranging the ingredients over a platter and served chilled. The beauty about this salad is its simplicity but the deliciousness comes from the fresh ingredients. Also, the colors resemble the Italian flag. It is called caprese as it is named after the island of capri where it is believed to have originated from. 

What ingredients do you need to make this caprese salad?

To make this caprese salad we need cherry tomatoes, burrata cheese, fresh basil, garlic, olive oil, balsamic vinegar, salt, pepper. I have served it with crusty sourdough but you can use any bread you like. 

What equipment do you need to make this caprese salad?

We grill the cherry tomatoes in a sauté pan over medium heat. The crunchy garlic is made with olive oil in a small sauce pot – the garlic has to be sliced thinly, I’ve used a knife and chopping board but you can use a mandolin as well. The salad is assembled in a serving platter. 

How to make this caprese salad?

In small sauté pan add the cheery tomatoes and place on the stove on low to medium heat. Cover with a lid and cook for 5-10 minutes until the outside skin is blistered and they have a little color. While this is cooking let us make the crunchy garlic, slice the garlic thinly. In a small sauce pot add the olive oil and transfer the sliced garlic. Place on low heat and cook for 5-8 minutes or unit the garlic is lightly golden and the oil is bubbling. In a serving platter add the warm cherry tomatoes, burrata cheese, basil leaves, season with salt, pepper and balsamic vinegar. Top with the crunchy garlic and serve with the crusty bread.

Serving this salad and storing options?

The best way to serve this salad is while the tomatoes are warm, the burrata cheese is cold and the garlic is crunchy but still warm in the olive oil. It pairs perfectly with a crusty bread. You can use a sourdough or use my homemade no knead bread recipe. It is also delicious with crackers or breadsticks. It is a delicious salad to serve with grilled fish or chicken breast and white wine. The leftovers can be stored in an air tight container in the fridge for a day but the garlic will get soggy and the tomatoes will also release a lot of its juices – all still very delicious.

Ingredients
  

  • 15-20 Cherry tomatoes preferably on the vine
  • 1 whole burrata cheese
  • 10-15 fresh basil leaves
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt & Pepper to taste

Serve with:

  • Crusty bread

Instructions

Notes

  • It is best to serve this salad when you are about to eat it so the tomatoes are warm while the cheese is cold and the garlic is crunchy and warm too.
