Chewy and soft blondies packed lemon juice and zest making it a lemon lovers dream dessert. It is a small batch recipe that is easy and ready in under 30 mins. A simple sweet treat that is delicious, refreshing and the perfect end of summer recipe.
I am currently in my transition recipe phase where I am making recipes that are perfect for the end of summer and the onset of fall. It is still hot outside so I’m not going to lie and say I am all into autumn and pumpkin spice latte but I must say I am into the recipes that can get me excited for the upcoming season. These lemon Blondies are absolutely smashing, they are packed with lemons which has lemon juice and lemon zest, making it refreshing and filled with lemon flavour. We need fresh lemons for this recipe and artificial juice just does not make it taste the same.
Everyone needs a simple recipe that you can bake up in no time and I think the beauty about a bars and squares is that they are very easy to prepare, they are perfect to slice up and serve, they are delicious warm and cold, you can also travel with them quite easily in a box and they don’t get ruined, their shelf life is much more longer and they are absolutely delicious whenever you eat them. So this lemon Blondie is perfect for you to travel with but they are also perfect to whip up during the week as well as over the weekend, it takes less than 30 minutes to mix and bake so let’s get to it.
Blondies are basically a type of desert bar that is flavored with vanilla extract and brown sugar to give it that lovely chewy texture but also a very nice sugary caramel flavor. The difference between a Blondie and brownie is that Blondies don’t have dark or milk chocolate in it you could find white chocolate in a Blondie however brownies always have chocolate and cocoa powder. They are both bar deserts that are usually cut into squares after baking and cooling. The beauty about Blondies are that you don’t need any fancy equipment, all ingredients to prepare the recipe are simple, it comes together fairly easily and it also bakes up in little to no time.
These are lemon Blondies which means they are Blondies that are flavored with lemons, in this case fresh lemons using lemon juice and lemon zest I have not used any white chocolate in this recipe but I do glaze the Blondies with a lemon icing which is just lemon juice and icing sugar that’s been mixed together which creates a delicious sugary crust on top once the icing sets.
We need fresh lemons to make this recipe. We are using the zest and juice to make this recipe. We also need a dewdrops of lemon juice in the glaze as well. I would only recommend using fresh lemons to make this recipe, if you don’t have them you can make lime blondies as well and they are delicious! But use fresh limes.
We rub the lemon zest and castor sugar together until it is a pale yellow color. You can use granulated sugar as well. This blonde recipe doesn’t use brown sugar like most blondie recipes as we want to keep the color yellow and avoid that brown caramel color.
I have used salted butter in this recipe so I didn’t use additional salt in the batter. We need melted butter in this recipe but you could use browned butter as well. I would recommend using melted butter and not oil as it changes the structure of the brownie once it bakes. You could use a dairy free butter to keep this lactose free.
The recipe calls for a whole egg, you could use a flaxseed egg in this recipe as well.
All purpose flour, maida, cake flour all work well in this recipe. If you want to make this recipe gluten free you can use a gluten free flour mix cup for cup measure.
We need a little icing sugar to make the lemon glaze for the blondies on top. This is optional but it really does add more lemon into the blondie and a delicious sugary crunch.
To mix the Blondie batter I use a mixing bowl and a rubber spatula, we do need to use our hands to rub the sugar and lemon zest together in the beginning of the recipe as this helps transfer the beautiful lemon flavor into the Blondie. I like to bake the Blondie in a loaf tin ideally an 8” loaf tin which is lined with baking paper. Once it is baked, let it cool on a wire rack and mix the glaze ingredients in a small bowl with a spoon.
Pre-heat the oven to 180°C line and 8 inch loaf tin with baking paper and baking spray and set that aside. In a mixing bowl we add the castor sugar and lemon zest, we rub them together using your fingers to transfer the flavor of the lemon zest into the sugar, we then add the melted butter mix that until it’s combined. Add the egg and we stir that together. Add your flour and lemon juice and stir it until it’s combined, you can add a pinch of salt as well at this stage – I used salted butter hence I stayed away from the salt. Transfer the mixture into your lined loaf tin and bake it for 10 to 15 minutes until the top is risen and a toothpick inserted into the centre comes out clean. Once it’s baked through, transfer to a wire rack and let it cool for a few minutes before you put the icing on top. To make the icing we stir the lemon juice and icing sugar together until it’s smooth. You want to put this over the cooled Blondie and allow the icing to drip off, as it drips off it will begin to set and harden, slice into squares and serve.
Lemon Blondie is a best served cold, you can serve them with the icing or you can serve them without the icing and a dusting of powdered sugar on top, a little extra zest of lemon also is a good option. It is delicious with milk but it is also yummy with a cup of tea I personally like having it with green tea on the side. If you want to turn this into an elaborate desert I would recommend serving it with a little store bought lemon curd and a scoop of vanilla ice cream.
Once the Blondies are baked, glazed and sliced you can store them in air tight container at room temperature for 3 days, as it has fresh lemon juice and lemon zest in the Blondie I wouldn’t recommend storing it longer at room temperature if you are going to be storing it longer than this period of time it is better to store it in the fridge for up to 7 days. Ideally if you know that you are traveling with it I would recommend storing it in an air tight container in the freezer for upto 1 month, travel with them frozen. When ready to serve let it come to room temperature before you serve it. The icing might get a little soggy if you freeze it or refrigerate it for a long period of time.

hey liz, the recipe needs 1 whole lemon zest and 1/2 lemon juice which is approximately 1 tbsp worth of lemon juice.
