Flaky and buttery short crust pastry filled with a family of cheeses like mozzarella, cheddar, gouda, parmesan, cream cheese, pickles, herbs and black pepper. Topped with a paprika honey and served with a green salad. It is the easiest meal to whip up in little time but so comforting and perfect to ring in spring.
The weather has officially started getting a bit more warm. The past few outdoor walks have been feeling warmer than usual. The air is heavier and it feels a little less chilly. The breeze is still cool but the air has gotten hot so it is safe to say this is the time for open windows and sunshine. Spring is coming in hot – even though we (in UAE) do not have distinct seasons it is relatively good to eye ball the next month to be warmer and still bearable with a little cool wind. Now that I have given you this weather report, let me introduce you to the easiest lunch recipe you will make.
This pickle cheese galette is so simple to make but the beauty about this recipe is that it is delicious chilled and warm. Serve it with a tomato salad, green salad or little crunchy slaw to make it a complete meal. You will thoroughly enjoy it and trust me when I say, this recipe is going to be a flavor bomb because the cheese is salty, the pickles are sour, the honey is sweet and spicy with the addition of paparika and the pepper is pungent. All in all you can also serve this galette as an appetizer by cutting it into tiny pieces. So let us get to it.
Galette is a type of pastry from the French pastry cuisine which indicates a crusty base and some sort of filling. They can be free form and open while in some cases they can be closed as well. Galettes are sweet and savory and usually made with puff pastry or short crust pastry.
To make this galette we need short crust pastry (I have used my homemade recipe), pickles, mozzarella cheese, cheddar cheese, gouda cheese, parmesan cheese, cream cheese, fresh thyme, dried oregano, black pepper. I have also used honey and paprika to make a drizzle for the top which is perfect! I have made this galette using some of the leftover cheeses in my fridge as well hence do not be too picky.
To roll of the pastry we need a rolling pin, baking tray, baking paper. I have some of the cheese shredded while some of it is sliced. I have sliced the pickles with a knife and chopping board. You can use a sharp knife or a serrated knife to cut the galette once baked.
Preheat the oven to 180 Degrees C. Roll out the short crust pastry dough to 1/4 th inch in thickness and at least 12 inches in diameter- I like doing this between two sheets of baking paper which makes it easier to transfer to the baking tray. In the middle spread the cream cheese, add the mozzarella, cheddar, gouda layering the sliced pickles, fresh thyme, crushed black pepper between each layer of cheese. Top with half the parmesan cheese. Cover with a piece of foil on the top and bake for 30 minutes. Remove the foil and continue baking for 10 minutes until golden and bubbly. While this is happening warm the honey with paprika and take off the heat once simmering. Drizzle the hot honey over the galette, slice and serve.
It is delicious warm or cold. I like serving it with a tomato salad or a green leaf salad. Mum loves it with avocados and I like to have it with a leafy green salad. The hot paprika honey is a must though! It balances out the flavors beautifully.
The leftovers can be sliced and transferred to a zip lock bag, place in the fridge and store it for up to 1 week. Alternatively you can store it in the freezer for up to 1 month. When ready to serve let it come to room temperature and warm it in the microwave for 15 seconds before serving.
