This fluffy pumpkin spice mug cake is baked in the microwave and is the perfect fall dessert to make in under 5 minutes! It is easy and simple to mix directly in the mug.
I have come to realize you lot love a mug cake recipe. My brownie mug cake recipe is so popular amongst all of you so I thought it only fitting to make a recipe that is centered around fall and its flavors. And what better recipe to make than a pumpkin puree recipe as this is the most popular flavor of the season.
The recipe itself will take you under 5 minutes to mix and bake in the microwave. It is going to be your best baked treat this fall! The cake is best served warm with vanilla ice cream and maple syrup with a dash of cinnamon powder. You don’t need much to make it and most likely, you have all the ingredients needed in your pantry. So let us get to the recipe.
Microwave mug cakes are basically cake batter recipes that can be baked in the microwave and have the same result as that of baking in an oven.
It is pumpkin cake batter baked in a mug in the microwave. It is a single serve recipe that is fluffy, simple and delicious. It is ready in under 5 minutes and mixed in the same mug you bake it in.
For the wet ingredients we need pumpkin puree, oil (you can use melted butter, coconut oil, olive oil will work), vanilla, flour (use a gluten free flour mix cup for cup measure if you like), baking soda, salt and pumpkin spice (this is my homemade recipe).
To make this pumpkin mug cake we need a large coffee mug, to mix the batter we need a whisk or rubber spatula to make it. We also bake this in a microwave until it is done. The mug cake must be served with ice cream and ice cream used an ice cream scoop to serve it.
In a large coffee mug add the pumpkin puree, oil, sugar and stir until smooth. Add the flour, baking soda, salt, pumpkin spice and stir again. Bake in the microwave at 30 second intervals until risen and baked through. It took me 1 minute and 30 seconds. Serve with a scoop of vanilla ice cream, maple syrup and a dash of cinnamon powder.
The mug cake is best served with warm vanilla ice cream, topped with maple syrup and cinnamon powder. I absolutely love this recipe, you can also serve this with a knob of butter and honey with sea salt flakes – it is so comforting.
