Yes this is a pumpkin recipe and I know it is still hot outside because it is still September which technically is the end of summer so, this comes under my transition recipe series where I make recipes that are perfect for summer but also work for the onset of fall where, you know, it’s still warm outside but the evenings are a bit cool and it’s got that little cool breeze in the air. This pumpkin bread recipe is perfect because it’s a little warming since it’s got a few spices and it’s delicious warm out of the oven but iy is also cooling down because you can absolutely have a cold slice from the fridge, you can add a little bit of butter on top and just enjoy it as it is, so it works both ways and also add a little bit of comfort and cosy vibes.

When I say this is the only pumpkin bread recipe you will need believe me I mean it and trust me when I see that it is super easy to make you literally need 10 minutes tops to bring it together and it takes around about 40 – 50 minutes in the oven to bake which is perfect because while it’s baking you can grab yourself a cup of tea, read a book, take a nap, relax, go for a walk or do anything but it doesn’t take that long to prepare which makes for a perfect fall desert mid week or a weekend baking project that is easy to prepare.
What is pumpkin bread?
This is not a yeast bread recipe, this is a quick bread similar to that of banana bread where we mix the ingredients together, bake it in a loaf tin and slice it like you would slice bread but it is sweet and this recipe is more dessert than it is bread. The recipe has pumpkin purée, you can learn how to make your own at home by clicking here or you can just use store bought as well. It is the perfect recipe to bake for the onset of autumn and fall and a very simple desert usually consisting of pumpkin spice as well.

You don’t need any fancy ingredients to make this recipe I’m pretty sure most of the ingredients that you need are already there in your pantry which kind of makes it very easy to bring together and also very convenient, now you could absolutely go buy pumpkin bread from the store and I’ll be okay but it is great when you make it home and you are using fresh whole ingredients – believe me when I say it will be the best you will ever eat, so let’s get onto making it.
What ingredients do you need to make this easy one bowl pumpkin bread recipe?
Pumpkin purée-
I have used canned pumpkin purée to make this recipe you could absolutely use home-made now you can also get pumpkin purée in jars and not in cans and that’s also fine but it has to be pure pumpkin purée, it should not be pumpkin pie mix – we don’t want to have any other ingredients except the pumpkin in the purée
Melted butter-
You could use melted butter that is brown or you could use oil, it could be olive oil or coconut oil.
Eggs-
The recipe calls for two eggs, if you do not want to use eggs you could use two flaxseed eggs which is basically 1 tablespoon of flaxseed powder mixed with 2 tablespoons of water until it forms a gel. Or you can use one fourth cup of yoghurt or egg replacer powder as per the packet instructions
Molasses-
This as a delicious treacle flavour to the pumpkin bread you don’t need a lot here because a little goes a long way it also adds the dark beautiful colour, if you don’t have it you could absolutely use a dark corn syrup, golden syrup, honey or maple syrup as well but molasses really is the best option here
Sugar-
I’ve used three types of sugars in this recipe, we need brown sugar white sugar and granulated white sugar. The brown and white sugar are used in the pumpkin batter mix which adds a delicious flavour to the bread. The granulated sugar is added on top before baking which adds that crunch. If you don’t have brown sugar you could use white sugar all the way, the additional granulated sugar is optional but trust me I think it’s really good to have that additional textual element
Water-
This seems a little weird to add water in your better but the batter is pretty thick and we want it to be a soft and fluffy, the additional moisture in this cake actually makes it really tender. If you want you could use Apple cider or you wanna add orange juice you totally could do that instead but it has to be liquid. Keep it simple with the addition of milk as well.
Flour-
I’ve used all purpose flour for this recipe you could use cake flour, Maida as well, if you want to add a bit more texture into the cake you could swap half of the flour with oat flour/whole-wheat flour it will make it a bit more dense but it will definitely be a delicious flavour, you can use any gluten-free flour mix to make this cake gluten-free and it works fine!
Flavouring-
To spice this cake I have used vanilla extract, of course pumpkin spice mix and I also use cinnamon powder, now you could absolutely use a mixture of nutmeg cloves ground ginger allspice. You can click here to know how to make a pumpkin spice mix at home however you must add a little extra cinnamon because this extra cinnamon flavour in the cake is delicious, you don’t taste it specifically but you know it’s there in the background which is perfect

What equipment do we need to make this easy one bowl pumpkin bread recipe?
The beauty about this cake is that it’s a one bowl recipe so we use a single bowl to mix the wet ingredients and then the dry ingredients. Before you know it, the batter is ready which we need a whisk and rubber spatula to bring together. Bake this in an 8 inch loaf and you could get away with a 9 inch loaf as well, that is lined with baking parchment.
How to make this easy one bowl pumpkin bread
We start by preheating the oven to 180°C with then line and 8 inch loaf and with a little bit of melted butter and baking parchment we set that aside.
In a large bowl add the butter and sugar, mix until smooth with a whisk. We wanna add the pumpkin purée and water, mix again. Add the eggs and whisk until it’s completely smooth. Now I know my dry ingredients don’t have lumps hence I didn’t sift the them but if you are not sure, make sure to sift them to avoid over mixing the batter. Mix the wet and dry ingredients until smooth and finish with a rubber spatula to ensure you’ve covered all the dry ingredients. Pour this into your lined baking tin, top it with pumpkin seeds and granulated sugar. You then want to bake this for 45 to 50 minutes until toothpick inserted into the centre comes out clean, let the pumpkin cool down completely before slicing and serving or else it will fall apart

How to serve this easy one bowl pumpkin bread?
Serve it as it is with a little bit of butter or maple butter and maple syrup, scoop of ice cream and a cup of tea. It does not matter as it is absolutely delicious.
How to store this easy one bowl pumpkin bread?
For the leftover slices I like to store them in Ziplock bags and place them in the freezer for up to 2 months you could place it in the fridge if you know you’re going to consume the bread within the next week it lasts well in the fridge in an air tight container for up to 7 days

Easy One Bowl Fluffy Pumpkin Bread
Equipment
- Mixing bowl
- Whisk
- Rubber spatula
- 8/9inch loaf tin
- Baking paper
Ingredients
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon pumpkin spice
- 1/2 teaspoon cinnamon powder
- 1 cup pumpkin purée
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup butter melted
- 2 eggs
- 1/4 cup water
- 2 teaspoons molasses/maple syrup/honey
- 1 tsp vanilla
Topping:
- 3 tbsp pumpkin seeds
- 2 tbsp granulated sugar
Instructions
- Preheat the oven to 180℃. Line an 8 inch loaf tin with butter and baking paper.
- Stir together flour, baking soda, salt, cinnamon powder and pumpkin spice.
- In a large bowl add the butter, sugar, pumpkin purée and whisk. Add the eggs, vanilla and whisk.
- Add dry ingredients into the wet ingredients and fold together until smooth.
- Transfer to the tin, top with pumpkin seeds and granulated sugar.
- Bake for 45-50 mins until risen, tooth pick inserted into the center comes out clean.
Notes
- Do not over mix the batter once the ingredients have been combined or else you will get a tough bread after it is baked.
- You can add pecans or any nuts instead of the pumpkin seeds.
- Do not over bake as the bread will continue to cook with the heat once out of the oven.
