Fluffy and moist chocolate cake for ONE that is frosted with a delicious silky smooth ganache. A quick and easy recipe to sort out those cravings.
Some recipes are winners just because they are easy to make, have simple ingredients and can be done in no time. This one is just that. If you love a good chocolate cake then this is the recipe for you. It is perfect for one but you can get generous and share it with some one. It just happens to be an eggless recipe and is packed with cocoa for an intense chocolate flavor.
For the dry ingredients we need flour, cocoa powder, baking soda, pinch of salt. As for the wet ingredients we need milk, yogurt, oil, vinegar. The frosting is a basic ganache with double cream and dark chocolate. A little salt goes a long way in this recipe. You can garnish the recipe with sprinkles or a dusting of cocoa powder as well.
To make the cake batter we need a small mixing bowl and fork. I have baked this cake in a 4 inch round tin lined with baking paper in an oven. There are a few baking options with this recipe. And I will discuss them below.
You can make this recipe a mug cake by pouring all the batter into a large coffee mug a little more than half way through. Bake until it has risen and this should take 10 – 15 mins in the oven. If you are baking this mug cake in the microwave it will take 45 seconds to 1 minute. I would recommend cooking it In 15 second intervals until done.
If you don’t like yogurt you can use milk in that place. Use any yogurt and milk you prefer to keep this plant based. Use gluten free flour mix to make this cake gluten-free.
This batter will give you two chocolate cupcakes. Don’t over bake them, they will bake in 10-12 minutes as opposed to baking it in a 4 inch tin. You will need a cupcake tray/mould with cupcake paper liners to make these into cupcakes.
Preheat the oven to 180℃, line a 4 inch baking tin with baking paper and brush with oil. Set aside. In a small bowl add the wet ingredients and mix until combined. Add the dry ingredients and stir until smooth. Pour into the prepared tin and bake for 15-18 minutes until risen and tooth pick inserted into the center comes out clean or with moist crumbs. Remove from the tin and let it cool completely before frosting.
To make the frosting there are two options: to make a stiff spreadable frosting use 30gm cream and 30gm dark chocolate (heat this in a microwave for 30-45 seconds until the cream is hot and the chocolate is melting, stir until smooth and set aside to cool and firm up). To make the frosting pourable and like an icing add 60gm cream and 30gm chocolate (to a bowl and heat in the microwave for 30-45 seconds until the cream is hot and the chocolate is melting, stir until smooth and set aside to cool and firm up)
Pour/ spread over the cooled cake, sprinkle with salt, slice and eat or just dig in with a fork.
This cake is yummy without the frosting and you can eat it is or with a dusting of icing sugar, a scoop of vanilla ice cream or whipped cream. However I personally love the addition of the frosting as it is simple to make and so yummy with the cake. There are 2 frosting options: 1. Stiff frosting and 2. Icing – both use cream and dark chocolate but just in different quantities.
It is a single serve recipe which means I don’t think you will have any leftovers but incase you do, transfer the cake to an air tight container and leave it at room temperature for a day or in the fridge for 4-5days.
