Chewy, rich in chocolate, delicious and indulgent. These chocolate fudge brownies are perfect for a cozy baking night in, serving 4 people in under 30 minutes – it is the perfect small serve recipe.
It is no secret that I love a good brownie. Take my OG crackle top brownie recipe for instance. It is simple but so delicious and delivers on all the aspects of a good fudge brownie recipe. Since then I’ve made so many types of recipes including my everyday weeknight cocoa brownies that are team cakey brownies. Having said this I have also made a yummy skillet brownie that is perfect for 2 people to sharing, date night dessert done right in my opinion. All this said, I do love a single serve or small serve recipe and this small serve fudge brownie recipe is such a winning one.
With minimal ingredients, bare usage of equipment, no fancy or fussy techniques – this small serve fudge brownie is intensely delicious, simple to whip up and takes less than 30 minutes to mix and bake. It is such a comforting recipe to bake for a cozy weeknight dessert treat. You could easily feed 4 people with this recipe but that is subjective based on how much you consider as a single portion, LOL! So let us get to the recipe.
Single serve recipes or small serve recipes are those which serve one portion. When baking this is not easy to achieve as most baked goods feed at least 6 people, things like cakes, cookies and breads aren’t commonly made for single serve options. However this recipe is a single serve, you can feed 2 but I wouldn’t share.
Brownies can be cakey, molten or fudgy. This recipe caters to Team Fudge Brownies. The crackle top aka shiny crust comes from the sugar and eggs being beaten until pale and fluffy. It is rich, indulgent and delicious. Brownies are a simple dessert bar that are fit for chocolate lovers, they are easy to travel with, simple to make, uses pantry ingredients and very satisfying.
To make these brownies we need butter, dark chocolate, egg, brown sugar, castor sugar, flour, corn flour, cocoa powder, salt. You could skip the corn flour and do almond flour or just leave it out. If you are using salted butter, leave out the salt. I do like adding flaky sea salt on the top of the brownie once it is baked.
We need a bow to melt the butter and chocolate in a microwave. We also need a mixing bowl to beat the egg and sugar until creamy. I have used a whisk but you could do an electric beater as well. The brownies are best baked in a 3×3 square tin or an 8 inch loaf tin – they give the brownies height as well as make the most perfect 4 pieces once baked. I have baked this brownie in a 6 inch round tin which is why in the images the brownie is round, it also works but I prefer square or rectangle brownies.
Preheat the oven to 180 deg C and line a 3×3 inch square tin or an 8 inch loaf tin and set aside. In a bowl add the butter, dark chocolate and melt in the microwave for 20 second intervals, stirring between each interval – until smooth. Allow to cool.In a large mixing bowl add the egg, sugars and vanilla, whisk until pale, creamy and smooth. Around 2-3minutes, you can do this with an electric beater as well. Add the melted chocolate and butter mixture, whisk until combined. Add the flour, corn flour, cocoa powder, salt and fold together until combined. Pour into the prepared tin and bake for 12-15 minutes until the top is shiny, crinkly and a tooth pick inserted into the center comes out with damp/moist/sticky crumbs. Allow it to cool before cutting into 4 equal pieces.
These brownies are best served at room temperature with a scoop of vanilla ice cream but you could us any ice cream you like, even coffee or pistachio ice cream. You could also do a drizzle of salted caramel sauce. This is a small serve recipe and you shouldn’t have a lot of leftovers but if you do, store the brownies in an air tight container at room temperature for 1 day and in the fridge for up to 1 week. When ready to eat, warm it in the microwave for 10-20 seconds and serve.
