Sticky Toffee Pudding (Single Serve Recipe For ONE)

Easy, simple and saucy this sticky toffee pudding recipe is going to be the only single serve dessert you need. It is so rich and comforting and happens to be eggless as well. 

I absolutely love sticky toffee pudding. It is one of the best desserts you will make and eat, especially if you like dates. This recipe is an eggless one but it is so tender, soft, gooey gooey and saucy in every single bite. You could serve it with a scoop of vanilla ice cream or whipped cream or cold cream but I enjoy it on its own with a sprinkle of sea salt on top. Doesn’t mean you cannot make this recipe for two to impress a special someone. Alternatively it is a yummy dessert to make over the weekend or a weeknight treat for your self. 

I have made a classic sticky toffee pudding recipe before and it is absolutely yummy but that recipe feeds a crowd and is perfect if you are entertaining (maybe a galentines celebration situation). This recipe is perfect for an intimate (valentines day) celebration, if you know what I mean. So without any delay let us get to the recipe.

What is sticky toffee pudding? What is sticky toffee pudding made from? What do you eat sticky toffee pudding with?

The dessert sticky toffee pudding and it is a sweet treat recipe made of plain flour, eggs, dates, cream and butter provide the backbone, while the exotica comes from soft brown sugar and a splash of vanilla. It tastes decadent, rich, has caramel notes, is chewy and saucy all in one. It is commonly eaten with custard, ice cream, double cream.

What are single serve recipes?

Single serve recipes are those which serve one portion. When baking this is not easy to achieve as most baked goods feed at least 6 people, things like cakes, cookies and breads aren’t commonly made for single serve options. However this recipe is a single serve, you can feed 2 but I wouldn’t share.

What ingredients do you need to make this single serve sticky toffee pudding recipe?

To make this pudding we need dates, baking soda, boiling hot water, brown sugar, vanilla, flour, corn flour, salt, baking powder, cinnamon powder. The batter is topped with butter, brown sugar and more boiling water. 

What equipment do you need to make this single serve sticky toffee pudding recipe?

To make this pudding we need a mixing bowl, rubber spatula, chopped board and knife. The water mist be boiling you can do this in a pot over the stove or in a kettle. The batter is baked in the oven in a 5 inch ramekin but any oven proof dish will work.

How to make this single serve sticky toffee pudding recipe?

Preheat the oven to 180℃, get a 5 inch oven proof dish and set aside. In a mixing bowl add the chopped dates, baking soda and boiled hot water. The mixture should get foamy and puff up. Stir and let it soak for 3-5 minutes until the dates have softened up. Add the brown sugar, vanilla and stir. Add the dry ingredients and stir together using a rubber spatula. Pour the batter into the ramekin. Top the batter with knobs of butter, brown sugar, hot water and bake for 12-14 minutes. The edges should be bubbling with sauce while the top should be dry to the touch and spongy. Serve with a sprinkle of sea salt flakes. 

Serving this single serve sticky toffee pudding recipe?

This pudding is best served hot or warm with a sprinkle of sea salt on the top. Serve it on its own or with a scoop of vanilla ice cream, a dollop of whipped cream, poured over double cream or pistachio ice cream as well. There would be no leftovers considering this is a single serve dessert but if you need to store any leftovers make sure to cover it with cling wrap and store at room temperature for 2 days and when ready to eat microwave for 10 seconds but the sauce wouldn’t be as saucy any more so it is best eaten on the day when its made.

Ingredients
  

  • 45 g medjool date pitted and chopped
  • 30 ml boiling water
  • 1/4 tsp baking soda
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla
  • 1 tbsp honey
  • 2 tbsp flour
  • 1 tsp corn flour
  • 1/4 tsp cinnamon powder
  • 1/4 tsp salt

For the topping sauce:

  • 1 tbsp butter tiny cubes
  • 1 tbsp brown sugar
  • 3 tbsp boiling water

Instructions
 

  • Preheat the oven to 180℃, get a 5 inch oven proof dish and set aside.
  • In a mixing bowl add the chopped dates, baking soda and boiled hot water. The mixture should get foamy and puff up. Stir and let it soak for 3-5 minutes until the dates have softened up.
  • Add the brown sugar, honey, vanilla and stir. Add the dry ingredients and stir together using a rubber spatula.
  • Pour the batter into the ramekin. Top the batter with knobs of butter, brown sugar, hot water and bake for 12-14 minutes. The edges should be bubbling with sauce while the top should be dry to the touch and spongy.
  • Serve with a sprinkle of sea salt flakes.

Notes

  • Do not over bake the pudding as it meant to be gooey gooey and saucy at the bottom.
  • It is best served hot/warm.
