Fluffy and tender, this vanilla mug cake will be your go to microwave mug cake dessert recipe when you need a quick and easy sweet treat. It is mixed in the mug, baked and served it in too. Top it with powdered sugar and your favorite jam.
My microwave chocolate brownie mug cake recipe is such a winner, making its sister counter part the vanilla version seemed only fitting. It is such a simple sweet treat that comes together easily in a mug. You bake it in the microwave in the same mug and serve it in the mug as well. Serve it with a dusting of powdered sugar while still warm and a dollop of your favorite jam for the most delicious dessert. Now I must admit I hate mug cakes, I’ve always found them dry, insipid and cardboard like. So I took it up on myself to make a recipe that I not only enjoyed making but also eating.
Recipes like these are PERFECT single serve options. If you don’t want to make large quantities, dirty a lot of equipment and enough just for your self then this is the recipe for you. This is a yummy dessert to prepare for your self, your loved ones or as a gift to impress someone. I have a few single serve recipes, make sure to check them out here. Microwave mug cakes are basically cake batter recipes that can be baked in the microwave and have the same result as that of baking in an oven.
All cake recipes are different and all microwaves are different. There is no universal way to bake cake in a microwave. However, when making cakes in the microwave, always under cook them, hence start by cooking then for 1 minute on the heating mode. Keep increasing by 30 second intervals and test the texture with a knife or tooth pick.
The beauty about this recipe is that we down need any fancy ingredients. They are most likely already sitting in your kitchen pantry. For the dry ingredients we need all purpose flour, sugar, baking soda and salt. For the wet ingredients we need melted butter, milk, vanilla, vinegar.
To keep this cake gluten free, use gluten free flour mix cup for cup measure. If you want to make this cake vegan use any oil in place of the butter and a plant based milk of your choice. You can use rainbow sprinkles for a birthday cake vibe or use spices like almond extract, cinnamon powder, cardamom, etc. Use add ins like chocolate chips or toasted almonds.
The cake batter is mixed in the mug you will microwave it in, I have used a 10 -12 ounce mug to make this cake, the smaller the mug the higher the chances of the batter over flowing while baking in the microwave. The battle should come half way in the mug. Alternatively you can bake the batter in two smaller cups. I have used a rubber spatula to mix the batter. If you have lumps in the dry ingredients I would recommend sifting them through a strainer. We also need a microwave to make this cake.
This vanilla mug cake is best served warm with a dusting of powdered sugar and your favourite fruit jam. Alternatively you can serve it with a scoop of vanilla ice cream, toasted nuts, whipped cream, fresh fruit etc.
