Vegan Watermelon Banana Ice cream

Creamy, fruity and refreshing. This vegan nice cream is a vegan ice cream that is dairy free but packed with all the flavor. Filled with watermelon, bananas and maple syrup it is a quick and easy dessert.

This recipe is not your average ice cream. Firstly it contains no cream or dairy in any form. It is my easy vegan “nice” cream that is simple to make and very delicious to eat. A great dessert that is fantastic for summer, cooling and refreshing to say the least. 

The beauty about this recipe is you can make it on the spot and take only a few minutes. However you need to freeze the watermelon and bananas ahead of time to ensure that they blend well the next day. I like freezing the fruit in zip lock bags and keeping them in the freezer, this allows me to make ice cream as and when I feel like. 

What do you need to make this Vegan Watermelon Banana Ice Cream?

 

Watermelon –

I’ve used fresh watermelon that I cut into cubes and transfer into zip lock bags. Freeze for 12 hours at least until frozen. In place of watermelon you can use pineapple, melon or even a combination.

Banana – 

I’ve used fresh Banana or even over ripe ripe bananas that I cut into cubes and transfer into zip lock bags. Freeze for 12 hours at least until frozen. In place of banana you can use mango.

Maple syrup –

To keep this vegan, maple or agave syrup. If you are okay with using honey then honey is a good option. You could use sugar but it doest need much sweetener since the banana and watermelon is very sweet naturally. 

Flavor –

I have used vanilla extract and a pinch of salt, you can use any flavoring like lemon juice, almond extract, cinnamon, cardamom etc. 

Storing and serving this Vegan Watermelon Banana Ice Cream?

Once the ice cream is made you serve it immediately. You can store it in an air tight container in the freezer for upto 1 week. While serving it you can top it with some sliced almonds and cookies.

Vegan Watermelon Banana Ice cream

Equipment

  • Food processor
  • Rubber spatula

Ingredients
  

  • 2 cups Watermelon frozen
  • 1 cup Banana frozen
  • 1 tbsp Maple syrup
  • 1 tsp Vanilla
  • Pinch of salt

Optional

  • 1 tsp Lemon juice

Instructions
 

  • Blend all the ingredients until smooth, you don’t need to add any water but you can increase the lemon juice to help the mixture along.
  • Serve in glasses immediately. Top with almonds or cookie crumbs.

Notes

  • Be patient and allow all the ingredients to blend.
  • If your fruit isn’t frozen enough the ice cream will become a smoothie consistency. Hence ensure they fruit is frozen well.
