Veggie Rainbow 🌈 Sandwiches (Easy Pride Month Recipe)

A delicious and simple vegetable sandwich that is nutritious and healthy. It is a vibrant and colorful recipe with the rainbow theme just in time to celebrate and get inspired with Pride month food recipe ideas.

I was inspired to make this sandwich when I saw someone online eating a veggies sandwich that was so vibrant and packed with all the colors it got me craving a vegetable sandwich. Now, I have had my share of vegetable sandwiches in the form of Bombay chutney veg sandwiches which are a thing of beauty but I have not had anything like this. This sandwich  can be a salad, main course, appetizer all in one. 

The beauty about this recipe is that you can customize to your liking and honestly it works like a charm. You can wrap it in baking paper, foil and store it in the fridge – makes for a delicious lunch recipe on the go for the next day. In saying this you must have some spread to go along with the recipe. I would suggest guacamole, hummus, spread cheese, sour cream, or anything you prefer. Sometimes I like to keep it simple with greek yogurt, mustard and olive oil. I think it is timely considering this month is celebrated as Pride month aka rainbow 🌈 loving everything aka this rainbow sandwich enters the chat.

The month long celebration began with Gay Pride Week in late June 1970 – which was a public celebration that marked the 1st anniversary of the violent police raid at New York’s Stonewall Inn, a gay bar. The word “pride” stands for an integral part of cultural significance include people who are Lesbian, Gay, Bisexual, Transgender, Queer, Intersex (LGBTQ) community, representing solidarity, collectivity and identity, with no discrimination or violence. It was Bill Clinton who declared June as the “Gay & Lesbian Pride Month” but it was Barack Obama who went one step further with June being LGBTQ Pride month.

What are pride inspired recipes?

Pride recipes are those which include colorful ingredients to showcase unity in diversity through food. This could be in the form of sweet or savory recipes. They could be starters, main courses, juices, desserts, etc. 

What is the significance of the rainbow?

Rainbows in general signify hope, love, happiness and acceptance. When we see a rainbow most often than not it is after a heavy storm, which means there is a sign of good ahead. This emotion has been interpreted to signify joy, togetherness and good fortune for the future. Which are emotions that we need to be accepting of the diversity of humans around us. 

What are some rainbow foods?

You can use rainbow colored foods to make rainbow inspired recipes using food colors such as bread, bagels, pancakes, cakes, cupcakes and much more. Alternatively you can use rainbow or confetti sprinkles to make “rainbow” colored foods with the addition of these decorations on your baked goods. However to make easy pride inspired recipes to celebrate rainbow colored foods you can use a variety colored ingredients to create vibrant recipes. You can use fruits and veggies here to get creative, also it is said to eat the rainbow for the best nutritional value. 

What is a rainbow veggie sandwich?

It is basically a vegetable sandwich made with a variety of vegetables to give you a natural colored rainbow sandwich that not only looks good but also tastes good. 

What ingredients do you need to make this veggie rainbow sandwich?

To make this sandwich I have used a variety of veggies and fruits with brown slice bread, hummus and slice cheese with seasoning. To keep this recipe vegan you can leave the cheese out. As for the veggies I have used a combination of purple cabbage, tomatoes, cucumbers, carrots, mushrooms, kale, onions and yellow peppers. 

What equipment do you need to make this veggie rainbow sandwich?

I have used a knife and chopping board to cut and prepare my veggies but you can use a mandolin as I like to slice them thinly. I used a vegetable peeler to prepare the carrots and cucumbers (making thin ribbons). We will also need baking paper and foil to wrap the sandwich so it holds its shape once cut. I use a butter knife to spread the hummus over the sliced bread, I also like cutting the sandwich with a bread knife for a clean slice. 

How to make this veggie rainbow sandwich?

The first to do when making this sandwich is to prepare all your vegetables and fruits. I like slicing them finely with a sharp knife over a chopping board you can use a mandolin. Spread the hummus on one slice of bread and start layering the veggies on it. I like seasoning with a little salt, pepper and dried oregano on every other layer. Add a slice of cheese and cover with the other slice of bread. Wrap the sandwich in baking paper and foil like you would wrap a gift. Slice into half with a bread knife and serve. 

Serving and storing this veggie rainbow sandwich?

Serve this sandwich with soda, boiled eggs, or anything you like. I love making these sandwiches and cutting them in quarters, they. Make for a deliciously wholesome appetizer. Keep in mind if you are going to toast the bread allow it stop cool before assembling and wrapping or else it will get soggy. The wrapped uncut sandwich can be stored in the fridge for 1 day.

Ingredients
  

  • 4 slices brown bread
  • 4 tbsp hummus/spread of your choice
  • 2 slices cheese
  • 2 leaves purple cabbage shredded
  • 1/2 tomato sliced
  • 1/2 carrot ribbons made with a peeler
  • 1/2 cucumber ribbons made with a peeler
  • 1/4 onion sliced
  • 4 leaves kale
  • 4 white buttons mushrooms sliced
  • 1/2 yellow bell pepper sliced

Seasonings -

  • Salt pepper, dried herbs

Instructions

  • Wrap the sandwich in baking paper and foil like you would wrap a gift. Slice into half with a bread knife and serve. Repeat.

Notes

  • You cannot skip the baking paper and foil wrapping situation as without it, the sandwich will fall apart.
  • You can make this the night before and store it in the fridge for a yummy office lunch box recipe
