Fruity and delicious, this no churn mango sorbet is literally fresh mangos, lemon juice and salt. It is simple to make and the perfect summer dessert that is healthy and the most yummy treat.
It is no secret that I mangoes are my favorite fruit. So if you are new to this blog then let me tell you that there will always be a new mango recipe (or 3) on my website every year. When I received these gorgeous Sindhri mangoes from mango dxb – my house smelled like a mango scented candle. They were so juicy and perfectly ripe, I didn’t want to do much with them – hence it only seemed fitting that I make something which highlights the flavor of the mangoes. This no churn 3 ingredient mango sorbet was the only recipe lurching on my mind. So let us get to it.
Sorbet is not the same as ice cream. Sorbet is a frozen dessert made without any dairy products, usually made with fruit, sugar, water. It can include other ingredients like spices, flavorings and honey. Sorbet is considered to be fat free and lower in calories than most ice creams as it does not have any cream, milk or eggs in it. However it does have sugar in it. Strawberry sorbet like any other sorbet is delicious and a refreshing treat to indulge in but we cannot consider it to be healthy or good for you or bad for you as it is important to consume it in moderation like any other sweet treat.
To make sorbet at home we need a food processor or high speed blender. We freeze the fruit or freeze the juice of a fruit in ice cube trays and either blend the frozen fruit or the frozen fruit ice cubes until it is smooth and creamy. Sorbet does not need milk or cream, you could add water/lemon juice to help blend the mixture together. Traditional sorbet does not need egg to make it as well. To make sorbet at home we need a blender or food processor, without it you cannot make it at home.
The addition of 1-2 tablespoons liqueur (you do not really taste it but it will help the sorbet from freezing into a solid block as alcohol doesn’t freeze). If you do not like or consume alcohol then use extra honey. I have left the liquor and honey out of this recipe as I was going to finish it in one sitting since we served it for a party. The lemon juice was good enough to keep it soft but if you are storing it in the freezer (which you most likely will be doing) a little vodka or honey is the way to go.
To make this mango sorbet we need ripe mangoes, lemon juice and pinch of salt. You could use pre frozen mango chunks to make this sorbet recipe, I have used fresh mangoes, chopped it up and frozen it on a tray. If your mango is not sweet enough you will need to add more honey or maple syrup to achieve the desired sweetness.
To make the sorbet we need a food processor, rubber spatula and loaf tin to store the sorbet once blended. The mangoes are frozen on a tray or in a zip lock bag in the freezer before blending. If you are using blender it will take a little longer to get the smooth consistency – but it is not impossible. I would suggest using a high speed blender though.
If you are using frozen mango then great if you are using fresh mangoes make sure to freeze them until solid – around 3-5 hours depending on your freezer. In a food processor add the frozen mangoes, lemon juice and pinch of salt, blend together. At first the mixture will get lumpy, then grainy. Stop the machine every now and then to scrape down the sides and blend again. Once it is smooth and there are no pieces of fruit or lumps, transfer the mixture to the tin and place in the freezer and serve as needed.
I love serving this mango sorbet with tajin seasoning, the spicy and sour powder is perfect with the sweet sorbet. You can serve it with yogurt and granola to amp up your breakfast bowl. Alternatively just enjoy it on its own as the mango is so delicious.
