Creamy oatmeal with cinnamon spiced sautéed apples and toasted hazelnuts. A little maple syrup and it is the perfect fall breakfast recipe to cook up which happens to be healthy and simple to make.
I always feel oatmeal recipes are subjective so I don’t ever feel like sharing them. Why? Because of the Goldie locks theory. What the hell am I talking about? Just like in Goldie locks, everyone likes their oatmeal in a specific way, with milk, without milk, with cream, with syrup, with sugar or honey or dates. More on the liquid side or the thicker side. Don’t even get me started on the toppings. But there is something about this apple pie oatmeal that tastes almost like a dessert and I just felt it worthy enough to share with you as I have been eating it minimum 2 times for the last few weeks.
Now it is worth mentioning I have used my apple pie bourbon syrup recipe which is made with apple peels and it is such a winner! I admit a little effort to make but the flavor is so good and it pair well with any dessert or over ice cream, pour it into your coffee and make an apple pie latte as well. Without further ado let us get into the recipe.
Oatmeal is a dish made with oats cooked over the stove with water or milk. It can be made with instant oats, whole rolled oats, steel cut oats or any type of oats. The recipe is commonly served as a healthy breakfast option and paired with a variety of toppings such as fresh and dried fruit, nuts and seeds, spices like cinnamon or cardamom and sweetened with dates, maple syrup, honey or a more simpler option like golden syrup and sugar.
Apple pie oatmeal is literally creamy oatmeal served with cinnamon sautéed apples and topped with more cinnamon and toasted hazelnuts. I have served it with my apple pie syrup but you can use maple syrup or honey.
To make the oatmeal we instant instant oats, water, milk, salt. For the sautéed apples we need peels and cored apples, lemon juice, vanilla, water, cinnamon. I have topped the oatmeal with more cinnamon, a touch of freshly grated nutmeg, toasted hazelnuts and apple pie syrup but you can use honey or maple syrup.
I normally use rolled oats to make my oatmeal but I had run out so I used instant oats or quick oats to make it. I would recommend the rolled oats. If you are using rolled oats you will need 1/4 cup more water and it will take 3-5 minutes longer to cook with a lid on.
To make the oatmeal we need a small sauce pot with a lid and a sauté pan with a lid to make the apples. I have used a rubber spatula to stir it around while cooking, the apples are chopped into dices with a knife and chopping board. I have served the oatmeal in a wide bowl with a spoon.
To make the apples: Peel, core and dice the apples. Transfer to a sauté pan and place on low to medium heat. Add the lemon juice, cinnamon and water, cover and cook for 5 minutes – stirring every now and then or until softened. To make the oatmeal: Add the oats into the sauce pot and top with water, milk, salt. Place on low heat and cook for 5 minutes or until bubbling and soft. If it is too thick add more liquid if it is too thin add 1 tbsp more oats and continue cooking. Serving: Pour the oatmeal into the bowl, top with the sautéed apples, more cinnamon and toasted hazelnuts. Drizzle over the syrup and enjoy warm.
The oatmeal is always served hot with a little more milk, top it with the sautéed apples, more cinnamon, toasted hazelnuts and more syrup – use any that you like. You could also use walnuts, cashews or almonds. I also like adding a dash of salt on top.
This recipe serves 2 people and the chances are you wont have any leftovers but if you do, the sautéed apples can be stored in an air tight container in the fridge for 1 week. The oatmeal can be stored in an air tight container in the fridge, when ready to eat warm it in the microwave with some more milk or water and break it up with a spoon. Alternatively use your leftover oats to make my banana oatmeal pancakes.
