Carrot Cake with Cream Cheese Frosting for ONE

Fluffy and tender carrot cake filled with cinnamon and pecans. The cake is topped with cream cheese frosting and garnished with more nuts, the perfect baked treat for one. 

I was not a fan of carrot cake until a few years ago. But I realized it wasn’t carrot cake that I didn’t like as much as the carrot cakes I was eating. The did not have proper carrots, tasted like essence and had no substance. It wasn’t until I made carrot cake at home did I realize that I actually LOVED carrot cake.

There are a few carrot cake recipes on my blog, the carrot orange loaf cake, carrot coconut layer cake, orange carrot muffins, carrot sheet pan cake and the no bake carrot cake bites. This is an another one to add on the list but what makes it so special is the fact that it is a single serve recipe. The cake is perfect for one but if you want to share you can feed another person with it. You don’t need a lot to make this recipe, here are the ingredients.

What ingredients do you need to make carrot cake and Is carrot cake healthy?

To make the cake we need oil/melted butter, milk, yogurt, brown sugar, flour, baking powder, baking soda, cinnamon powder, vanilla, pecans and obviously we need carrots that are shredded finely. Which brings me to the next question, just because there is carrot in a cake doesn’t make it healthy. However it does help with kids who have trouble consuming their 5 a day. To make the frosting we need cream cheese, butter, icing sugar and vanilla. 

What equipment do you need to make this carrot cake?

We need a mixing bowl, grater, spatula, baking paper and a 4 inch baking tin. If you don’t have a tiny baking tin you can use a cup cake tray, this will make 2 cupcakes. However the baking time would change and I would tell you to bake the cupcakes for 12-14 mins. To make the frosting we need a whisk and a mixing bowl. I like to chop the pecans rather coarse so I can bite them while eating the cake. I have used the fine side of the grater to get thin shreds of carrot. 

How to make Carrot cake?

We start by grating the carrot and setting that aside. Preheat the oven to 180℃ and line your baking tin by brushing with oil and lining it with baking paper. In a mixing bowl add the oil, milk, yogurt, vanilla and stir together. Add the sugar and stir until dissolved. Add the flour, baking powder, baking soda, cinnamon powder, pecans, shredded carrots and fold together until combined. Pour into the prepared tin and bake for 20 mins until risen, golden and tooth pick inserted into the center comes out with moist crumbs. Let it cool before you frost it. 

To make the cream cheese frosting we need to whisk the butter until it is pale and fluffy. Add icing sugar, vanilla and whisk well until smooth. Add the cream cheese and fold together until combined, do not over mix. Frost the cake however you like and top wit more chopped pecans. 

Storing the carrot cake?

Once the cake is made it lasts in the fridge for 3-4 days. I like keeping it in an air tight container so it stays fresh. This cake actually tastes better the next day. I wouldn’t recommend storing it longer as the frosting won’t be the same.

Ingredients
  

Cake -

  • 2 tbsp oil/melted butter
  • 2 tbsp milk
  • 2 tbsp yogurt
  • 1 tsp vanilla
  • 2 tbsp brown sugar
  • 4 tbsp flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon powder
  • Pinch of salt
  • 3 tbsp raw carrots grated
  • 2 tbsp pecans

Frosting -

  • 1 tbsp butter
  • 1 tsp vanilla
  • 4 tbsp icing sugar
  • 3 tbsp cream cheese fridge cold

Garnish -

  • More pecans

Instructions
 

  • We start by grating the carrot and setting that aside.
  • Preheat the oven to 180℃ and line your baking tin by brushing with oil and lining it with baking paper.
  • In a mixing bowl add the oil, milk, yogurt, vanilla and stir together. Add the sugar and stir until dissolved.
  • Add the flour, baking powder, baking soda, cinnamon powder, pecans, shredded carrots and fold together until combined.
  • Pour into the prepared tin and bake for 20 mins until risen, golden and tooth pick inserted into the center comes out with moist crumbs. Let it cool before you frost it.
  • To make the cream cheese frosting we need to whisk the butter until it is pale and fluffy. Add icing sugar, vanilla and whisk well until smooth.
  • Add the cream cheese and fold together until combined, do not over mix. Frost the cake however you like and top with more chopped pecans.

Notes

  • Do not over mix the cake batter or else it will get dense and tough once baked.
  • Your carrots need to be grated you cannot use puree or finely chopped carrot here.

    1. Thank you for the comment. I love small batch desserts that feed a couple of people. I have noticed dividing down a dessert recipe is trickier as the measurements can get complicated. Which is why I have a personal preference to these single serve recipes as a lot of testing goes into it before I finalize it for the blog. Happy baking!
