This is the best banana bread that is simple to make, fluffy, very delicious. But most importantly it is refined sugar free so the sweetness comes only from the bananas and dark chocolate.
Do we need another banana bread recipe? Not really. Am I here with another one? Yes. Hear me out though – this is a sugar free banana bread. So if you want to make a simple one-bowl sugar free sweet treat then this is the recipe for you. This recipe works only with RIPE bananas. If they are not then I would suggest adding honey or maple syrup.
This recipe is an everyday banana bread recipe which can be enjoyed at anytime of the day and week. I like baking this recipe on a weekend and having it in the fridge all through the week for a quick snack or lighter dessert option. Not to mention a simple breakfast on the go as well. It is a real winning recipe and without any further delay let us get to it.
Most often than not banana bread includes ripe banana, butter, sugar, eggs, flour. Some recipes ask for cinnamon powder, chocolate chips, walnuts etc.
Using bananas which are not ripe enough can make the bread very dense and tough. You can also mess up the recipe by over baking it which can dry out the banana bread. Avoid over mixing the banana bread batter as well.
In many banana bread recipes you can get away with relatively ripe bananas but for this recipe specifically we need ripe to over ripe bananas. We want the skin of the banana to have dark spots and the banana should be soft and mushy. Also, if the skin has gone dark brown completely – the better.
Like all recipes, I say this with full conviction, there is no healthy or unhealthy food. Yes food can be more wholesome on its nutritional value but that doesn’t mean some foods are healthier than others. In saying this, the banana bread doesn’t have any added sugar in it and that makes it refined sugar free which can be better for consumption on a daily basis.
To make this sugar free banana bread recipe we need ripe to overripe bananas, melted butter, eggs, greek yogurt, flour, baking powder, baking soda, salt, cinnamon powder, chocolate chunks (I’ve used dark chocolate).
To make the banana bread we need a fork to mash the bananas. The batter is made with a large mixing bowl, spatula and 8/9inch loaf tin lined with baking paper. It is baked in the oven.
Preheat the oven to 170℃ and line an 8inch loaf tin with baking paper, set aside. In a large mixing bowl, mash the ripe bananas until a puree. Add the melted butter and whisk until combined. Add the eggs, greek yogurt and whisk well. Add the flour, baking powder, baking soda, salt, cinnamon, chocolate chunks and whisk until combined. Transfer to the lined baking tin, to get a bakery style crack on the top of the cake, dip a knife into melted butter or oil and run it along the batter in the center. Bake the banana bread for 45-50 minutes, or until a tooth pick inserted into the center comes out clean. Allow it to cool a little before slicing. The top will have a crust while the bread is warm once it cools down the crust will get soft.
The way to serve this banana bread is to toast a slice in the pan with butter and serving it with a drizzle of maple syrup or almond butter. Alternatively serve it with greek yogurt to make it a wholesome breakfast option. I would also serve it on its own with a cup of coffee. The best way to eat this banana bread is to reheat the leftovers in a microwave for 20-30 seconds until soft and tender. Store the leftovers in an airtight container in the fridge for up to 5 days.
