Easy Healthy Brookie Pie

Why choose between and brownie or cookie when you can have both at the same time? This healthy rookie recipe is so simple to make, it is a delicious healthy treat that is gluten and lactose free. 

Are you a brownie or a cookie ninja? For me it depends on my mood, even though I am partial to brownies there are some moments in life only a cookie can solve. This recipe doesn’t need you to choose. This healthy brookie pie is so simple to mix up and bake but I must take this moment to inform you that it is dangerously delicious ad having it around the house means it will get over before you know. Also, you know me enough by now to know that if I personally don’t LOVE a healthier and better for you recipe I will not share it. I cannot take credit for this recipe on my own, check out Dadaeats version which I saw years ago and couldn’t wait to try it out myself. This recipe is not the same and I have tweaked a few things to my liking. 

The beauty about this recipe is that it takes very little time to make, we mix both the batters in the same bowl one after the other, and bake it in the same pan. Trust me when I say it is simple it REALLY is simple but what adds to its ease are the ingredients. There aren’t any fancy components here, you might already have most of them your your pantry at the moment and if you don’t they aren’t difficult to buy or substitute. 

What is a Brookie Pie?

A brookie is a combination of a brownie and a cookie. It has the fudgyness of a brownie butt he crunchy and chewiness of a cookie. Both the batters are layered one on top of the other and baked until just set. It is cooled completely before slicing. It could have some nuts, additional chocolate chips and a little flaky sea salt sprinkle on top goes a long way. 

What makes this a healthy recipe?

While the term healthy has a subjective meaning to all, I call this recipe healthy as it has ingredients that are better for you. Making it higher in nutrition and more wholesome. While coconut oil for example might be high in calories, its health benefits are massive making it worth consumption. Hence I call it healthy for the nutritional value it has. 

What ingredients do you need to make this healthy brookie pie?

Cookie layer –

For the wet ingredients we need either peanut butter, almond extract, egg, coconut oil, vanilla. For the dry ingredients we need almond flour, baking soda, coconut sugar, chopped almonds, chocolate chips and sea salt. 

Brownie layer –

For the wet ingredients we need tahini, regular olive oil (not virgin or cold pressed), vanilla, egg and milk. For the dry ingredients we need cocoa powder, coffee powder, almond flour, baking soda, coconut sugar, chocolate chips and salt. 

What substitutes can you use to make this healthy brookie pie?

Tahini & Peanut butter –

You can use almond butter, cashew butter, hazelnut butter, tahini, sunflower seed butter, or any nut/seed butter you like. I prefer the flavor of peanut butter in the cookie and in the tahini brownie. What ever you decide to use it must be runny. Hence you would need to microwave it for a few seconds before making the dough. 

Coconut oil & olive oil –

You can use any oil you prefer or have at home. You could also use melted butter/browned butter to make this. I like using coconut oil I the cookie but the olive oil in the brownie is so subtle but absolutely delicious.

Egg –

To keep this recipe eggless you can use a flaxseed egg (1 tbsp flaxseed powder + 2 tbsp water mixed together and set aside until it forms a gel – this is one egg). You could also use egg replacer powder, I have tried it with yogurt but the flavors are not the same. 

Almond flour –

You can use any nut flour you like. I think almond is the best here but I have made the cookies with half almond flour and half oat flour as well. 

Coconut sugar –

You could use date sugar, palm sugar or any other dry sweet alternative you like. If you are using sweeteners like stevia etc you will need to reduce the amount as they can be much more sweetener in taste. I would recommend 1/4th of the suggested amount.

Add ons –

I love adding nuts to the cookie and chocolate chips to the brownie but sometimes I switch it up as well. You can add any you prefer. I also love the addition of walnuts in the brownie and chocolate chunks in the cookie. Sometimes I love adding cinnamon to the cookie and a mentioned I add coffee powder to the brownie you can add you favorite flavors like chopped up candy bars, more nuts etc. 

What equipment do you need to make this healthy brookie pie?

I have used a large mixing bowl and rubber spatula to mix the ingredients together. It is baked in a 7-8 inch round tin in the oven. I prefer lining the tin with baking paper to help it release easily once baked. 

How to make this healthy brookie pie?

Preheat the oven to 180℃ and line an 8 inch tin with baking paper, set aside. In a large mixing bowl we add the wet ingredients and coconut sugar for the cookie layer and stir together. Add the dry ingredients and add ons next and mix until combined. Layer it into the lined tin and set aside. In the same mixing bowl add the wet ingredients, coffee powder and coconut sugar for the brownie layer and stir together. Then add the dry ingredients and add ons, mix together. Pour over the cookie layer in the same tin and top with more chocolate chips. Bake for 20-22 mins until the top is just set, let it cool in the tin completely before slicing or else it will fall apart. Sprinkle with flaky sea salt. You can bake the layers interchangeably.

Serving and storing this healthy brookie pie?

This can be cut into pieces and served with a glass of milk, better yet enjoy it with your morning coffee or tea. They are yummy warmed in the microwave with a scoop of vanilla ice cream. I like portioning them into pieces, storing in zip lock bags and freezing them for upto 1 month. When ready to eat, remove from the freezer, defrost and microwave for a few seconds before serving.

Ingredients
  

Cookie Layer -

  • 1/4 cup peanut butter runny
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1 egg
  • 1/4 cup coconut sugar
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 cup chocolate chips

Brownie Layer -

  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1 tsp vanilla
  • 1 egg
  • 1 tsp instant coffee powder
  • 4 tbsp milk
  • 1/4 cup coconut sugar
  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup chocolate chips
  • 1/4 cup chopped almonds
  • Sea salt flakes

Instructions
 

  • Preheat the oven to 180℃ and line an 8 inch tin with baking paper, set aside.
  • In a large mixing bowl we add the wet ingredients and coconut sugar for the cookie layer and stir together. Add the dry ingredients and add ons next and mix until combined.
  • Layer it into the lined tin and set aside.
  • In the same mixing bowl add the wet ingredients, coffee powder and coconut sugar for the brownie layer and stir together. Then add the dry ingredients and add ons, mix together.
  • Pour over the cookie layer in the same tin and top with more chocolate chips.
  • Bake for 20-22 mins until the top is just set, let it cool in the tin completely before slicing or else it will fall apart.
  • Sprinkle with flaky sea salt, slice and serve.

Notes

  • Recipe adapted from Dadaeats.
  • If your nut/sed butter is not runny, microwave it for a few seconds before making the batter.
  • The Cookie and Brownie layer can be baked interchangeably, cookie layer first or brownie layer first, I switch it up every now and then. 
  • Do not over bake these or else they will be dry and crumbly.
