Healthy 2 Ingredient Cookies (Vegan | Gluten Free)

These cookies are also biscuits made with almond flour and maple syrup they are simple to make but so delicious, crispy and chewy in every bite. 

This recipe is directed to all those who love a good cookie/biscuit but cannot enjoy them because they have dairy and gluten in it. Don’t get me wrong I absolutely love gluten and dairy but there are ew who have diet allergies and this recipe is for you. The dough itself is simple to make and the icing can be made with any powdered sweetener that you prefer. Make it seasonal for Valentines day with a little pink and red food coloring. 

The beauty about this recipe is that there is no chilling time for the cookie dough, you can roll as thin or thick as you like depending on how you like to serve it, I made these into sugar cookies as they hold their shape well but you could leave them thicker and make them into shortbread. The baking time would vary slightly but everything else stays the same. 

What ingredients do you need to make these Healthy 2 Ingredient Cookies (Vegan | Gluten Free)?

To make the dough we need almond flour or almond meal, which is whole almonds ground into a powder and maple syrup. If you are not vegan you can use honey as well. For the icing I used icing sugar, lemon juice and food coloring gel. 

What substitutes can you use to make these Healthy 2 Ingredient Cookies (Vegan | Gluten Free)?

Almond flour –

You can use any nut flour you prefer. If you have aunt allergy you can use sesame seed powder (sesame seeds ground into a fine powder) or any seed powder. 

Maple syrup –

Any liquid sweetener works well in this recipe. I have also made it with honey and they flavor is yummy. 

Flavorings –

I like to add a little pinch of salt to bring out the flavor of the the almond flour but I also like to add a little vanilla paste – this optional though. You could add cinnamon powder, cardamom powder or orange zest as well. 

Icing sugar –

Any powdered sugar works here, like monk fruit sugar as well. You don’t need to make the icing but I prefer it as the cookie looks prettier after they are decorated. 

Lemon juice –

To make this icing I use lemon juice as it cuts the sweetness of the icing sugar. You can use lime juice or milk as well. 

Food coloring –

I have used vegan food gels that are not harmful in any way. You can use food coloring powders as well. There are many organic and chemical free options online. 

What equipment do you need to make these Healthy 2 Ingredient Cookies (Vegan | Gluten Free)?

We need a mixing bowl to bring the dough together. I like using baking paper to roll out the dough as this ensures it doesn’t stick to the kitchen surface. We need a rolling pin, any cookie cutter but these are the ones I used. You could just as well cut the dough into squares using your knife or use a glass to get a round cookie. You need a flat spatula to transfer the cookie dough to the baking tray, which brings me to the baking tray and oven as they are baked. 

How to make these Healthy 2 Ingredient Cookies (Vegan | Gluten Free)?

In a small mixing bowl add the almond flour and pour in the maple syrup. If you are adding any flavorings like salt, spice powders, vanilla etc now is the time to add it. Stir the mixture together and then using your hands bring the mixture together to form a ball. Place the cookie dough between two baking sheets and roll out using a rolling pin until 1/4 th of an inch in thickness. Cut the dough with your cookie cutter and transfer the cut out cookies to a lined baking tray with a spatula. Fold the extra dough together and roll again until all the cookie dough has been used, they don’t spread much while baking so we can pack the tray with many cookies. Bake in a preheated oven at 180℃ for 8-10 mins. I would recommend turning the tray half way through the baking process for even coloring. Remove from the oven and let them cool on a wire rack. You could serve them as they are at this stage but if you want to ice them then keep reading. 

We can get on with the icing until then, in a small bowl add the icing sugar, lemon juice and stir together until smooth. Divide the icing sugar into 3 parts and color one of them with red coloring. Color the other one with little red color to create a pinkish color. We should have 3 distinct colors in front of us. Pour each color onto a plate and dunk each cookie into the icing, swirl a little and lift up, you should have a marbled effect. Let it set for a few minutes before serving. 

Serving and storing these Healthy 2 Ingredient Cookies (Vegan | Gluten Free)

Once the cookies are iced and ready to serve I would serve them with milk or tea. They are great edible gifts as they store well at room temperature for over 10 days. Pack them in air tight containers or zip lock bags and they are crispy, chewy and delicious. You can also wrap them in little boxes as gifts for valentines day.
