Easy, Healthy & Delicious Recipes To Make In January

Here are some of my favourite recipes to whip up in January. They are simple to make but promise yumminess too. 

Happy New Year 2024! This is the first blog of the year. There are so many fun things lined up for this year and not to mention deliciously easy and comforting recipes. I have to start by saying thank you for being a part of this little food community and allowing me into your kitchen. Having said that there are some must have recipes to kickstart the year. 

Now, what comprises of a must have recipe for January? They have to be easy and inviting – meaning they should make you want to get into the kitchen and cook/bake. These recipes need to brush away those post holiday blues and make them vibrant, delicious and fun. In saying all of this, these recipes should also have a healthier touch/element to it since most of use are looking to get fitter and have a fresh start to the year with our food. I have and picked some of my favourite recipes that cover healthy aspects, they are easy to make, comforting, classic in some way or the other and definitely delicious.

If there was one cake to bake this winter season I would recommend this Masala Chai Cake. I had made during Diwali but it has become a regular tea cake in my house. It is so simple to make, very delicious, tender and moist. Not to mention, we use proper chai to make this cake. It is a one bowl recipe and doesn’t require any fancy ingredients to make it. The cocoa brownie pudding is literally 5 ingredients and doesnt need much time to make as well. I don’t know about you but Banana bread will forever always be a thing in my house, it is not a trend but something we make on the daily.

Masala Chai Cake
A fluffy cake spiced with masala chai that is easy, delicious and fragrant. All you need is one bowl to make it and a few pantry ingredients. Perfect for the festive season of Diwali.

Cocoa Brownie Pudding
An easy and delicious dessert to bake in under 30 mins. You need flour, cocoa powder, egg, butter, sugar and little salt to balance it. Crackle top crust, gooey chocolate center and brownie texture sides.

Breakfast Fruit Bread
A crumbly buttery fruity quick bread that is mixed together in one bowl. Slice it up and serve with some almond butter and coffee.

Keepin gwith the warm and cozy winter vibes, these cookies hit the spot. They have oats in them but more importantly brown butter that is the main character energy here. It is mixed together in a sauté pan which you brown the butter in. Believe me when I say these are the only oatmeal cookies you will need. These banana muffins are fantastic for school box additions. 

Brown Butter Oatmeal Chocolate Chunk Cookies
Chewy and chunky oatmeal chocolate cookies that are made in the same pan we brown the butter. They are simple to make, the dough doesn’t need chilling and baked in 20 minutes!

Fluffy and delicious banana muffins packed with cinnamon, honey, peanut butter and chocolate chips. A simple recipe that is wholesome and nutritious snack or dessert.

If you are looking for delicious but easy salads, then these recipes will not disappoint. They are perfect as a meal, for a lunch box situation or even as a side with some grilled chicken and fish. The beauty is they are customizable as well. 

Simple Quinoa Salad
Healthy and delicious quinoa salad filled with veggies, fruits and nuts. Tossed with a little lemon and olive oil, this salad is the perfect side dish at any meal that is wholesome and filling.
Grilled Eggplant Salad
A veggie salad that is refreshing, simple and delicious. Chargrilled eggplant slices, with a tahini yogurt sauce, fresh herbs, quinoa and burnt garlic chili butter. The perfect side for any meal that is easy but packed with flavor.

Let us get real, 2024 is about snacks. If there is one snack that is my GO TO, it has to be this Dahi Toast aka Yogurt bread. I’ve been making this since I was a kid and there is no age limit to it, very simple to whip up and you probably have all these ingredients in your fridge right now. A little veggie addition to your snacks with the no cook spring rolls that are packed with nutrition but so delicious!

Dahi Toast (Baked yogurt bread)
Crunchy toast filled with a sweet yogurt custard that is baked until just set. Top with nuts and powdered sugar before slicing and serving warm. A simple recipe but delicious and its ready in under 20 minutes.

Easy Hummus
This recipe is so simple and nutritious. Filled with chickpeas, tahini, lemon juice, olive oil and some garlic it makes for a yummy appetizer or snack. Add some avocado and beetroot into the hummus to make some quick colorful options.

Breakfast is the most important meal of the day and I do not take it lightly, these breakfast tacos are ready in under 10 mins giving you no excuse to skip it before work. I also like to fold them up and eat them on the go if I am in a hurry. The easy cheesy eggs on toast will not disappoint, you can make a tub full of it, store it in the fridge and use it through the week. Everyone needs a good granola recipe and here are my favourite recipes.

Crispy golden tortilla, topped with a runny yolk cheese egg, garnished with avocado, tomato slices, turkey salami and jalapeños. Easy breakfast recipe at anytime of the week.

This is a simple recipe with 1 cup fruit, 1 cup greens and 1 cup milk. It is perfect for breakfast but also a great way to fuel your body when you need a filling snack.
