Breakfast Tacos in 10 minutes

Crispy golden tortilla, topped with a runny yolk cheese egg, garnished with avocado, tomato slices, turkey salami and jalapeños. Easy breakfast recipe at anytime of the week. 

This is a simple breakfast recipe that feeds two hungry people, you can multiply the recipe and make as many as you like to feed a crowd. The recipe comes together in 10 minutes and is so easy to prepare. It is made in a single pan, if you are making more than 2 at a time you will need a larger pan. I have made these over a griddle pan as well. The beauty about this recipe is that you can use any toppings you like and have at home. 

What ingredients do you need to make a breakfast taco?

Tortilla –

I have used flour tortillas to make this taco recipe you can use corn tortillas or any tortillas you prefer to eat/have at home. I used the small tortillas if you are using a large tortilla you will two eggs per wrap or cut them small using a glass as the mould. 

Eggs –

You will need one egg per taco to make these breakfast tacos. Make sure to check the eggs for freshness. If the eggs are fresh the egg white will be firm and if they are stale the egg whites will be extremely runny. If they are very runny the tortilla will get a little messy but it will still work. 

Cheese –

I used a mixed Mexican cheese packet to make these tacos. You can use any melting cheese to make these tacos. I have made them with mozzarella and cheddar as well. You can use parmesan too. However you must use cheese or else the egg will slip off the tortilla. Just make sure it is grated. 

Seasonings –

I have used dried oregano, black pepper powder and a little salt to season the tacos. You can use any herbs you like. 

Toppings –

These are what I used, avocado, tomato, onions, jalapeños, salami. You can use any toppings you choose from chorizo to corn to parsley or even red cabbage. This can be meatless without the addition of salami as well. 

What equipment do you need to make this breakfast taco?

I used a frying pan with a spatula. You don’t need much to make this. I have used griddle pan to make more than 2 tacos at one time as well. 

How to make these breakfast tacos?

In a frying pan on low heat add the tortilla. Add the grated cheese on the edge of the tortilla creating a little cheese wall. Crack the egg into the center of the tortilla and season with oregano, pepper and cover with a lid. Cook for 2-3 minutes unit the egg is cooked and yolk is still runny (this is how I like it). Take it off the heat, transfer the taco to a plate using a spatula and top with avocado, salami, onions, tomatoes, jalapeños, cilantro leaves. Repeat with the other tortilla. Serve it hot. 

Serving and storing this breakfast taco?

Once the taco is made it should be eaten as it will not stay crispy for very long and it tastes better hot. You can add hot sauce, sour cream, mayo, lime juice on top as well. I wouldn’t recommend storing them longer, wrap the taco in foil and store at room temperature for 2-3 hours tops.

Ingredients
  

  • 2 flour tortillas small
  • 2 eggs
  • 4 tbsp grated Mexican cheese
  • 1/2 tsp oregano
  • 1/4 tsp black pepper powder
  • Pinch of salt

Topping:

  • Avocado slices
  • Salami slices
  • Tomato slices
  • Onion slices
  • Cilantro leaves
  • jalapeños

Instructions
 

  • In a frying pan on low heat add the tortilla. Add the grated cheese on the edge of the tortilla creating a little cheese wall.
  • Crack the egg into the center of the tortilla and season with oregano, pepper and cover with a lid. Cook for 2-3 minutes unit the egg is cooked and yolk is still runny (this is how I like it).
  • Take it off the heat, transfer the taco to a plate using a spatula and top with avocado, salami, onions, tomatoes, jalapeños, cilantro leaves.
  • Repeat with the other tortilla. Serve it hot.

Notes

  • If you like the egg more firm cook it longer on low heat, covered.
  • Add any toppings you like.
