Frozen Sorbet Fruit Slice (rainbow recipe)

This vegan inspired summer dessert is colorful, fruity and sugar free. It is layered frozen fruit puree that is sliced and served as a heathy sweet treat. This recipe is rainbow 🌈 colored, inspired by Pride month. 

It was announced that wee will be having summer from today (21st Jun) till 23rd Sept and boy oh boy it has started with a BANG! The humidity and heat was crazy in UAE today and it is just the start! Which doesn’t make me feel excited about the next couple of months ahead. Rest assured I got some cooling and delicious summer desserts lined up to cool us down. However this frozen sorbet fruit slice is barely a dessert – don’t get me wrong it tastes like a dessert but it merely frozen fruit puree that is layered and frozen. 

It is a simple recipe based on the ingredients needed but it is a little tedious to layer the fruit puree. I make this every year during summer and use up any of the leftover fruit to make it, this time I tired to stick with a rainbow themed slice but I was to hasty and didn’t freeze all my fruit so two of the layers have merged a little. Hence I would suggest when you have a little fruit leftover, transfer them into zip lock bags and freeze them. When you have enough of an assorted frozen fruit, make this recipe! What is pride month? What does Pride stand for? Why is June 1 Pride month? What is Pride month celebrating?

The month long celebration began with Gay Pride Week in late June 1970 – which was a public celebration that marked the 1st anniversary of the violent police raid at New York’s Stonewall Inn, a gay bar. The word “pride” stands for an integral part of cultural significance include people who are Lesbian, Gay, Bisexual, Transgender, Queer, Intersex (LGBTQ) community, representing solidarity, collectivity and identity, with no discrimination or violence. It was Bill Clinton who declared June as the “Gay & Lesbian Pride Month” but it was Barack Obama who went one step further with June being LGBTQ Pride month.

What is the significance of the rainbow?

Rainbows in general signify hope, love, happiness and acceptance. When we see a rainbow most often than not it is after a heavy storm, which means there is a sign of good ahead. This emotion has been interpreted to signify joy, togetherness and good fortune for the future. Which are emotions that we need to be accepting of the diversity of humans around us.

What are some rainbow foods?

You can use rainbow colored foods to make rainbow inspired recipes using food colors such as bread, bagels, pancakes, cakes, cupcakes and much more. Alternatively you can use rainbow or confetti sprinkles to make “rainbow” colored foods with the addition of these decorations on your baked goods. However to make easy pride inspired recipes to celebrate rainbow colored foods you can use a variety colored ingredients to create vibrant recipes. You can use fruits and veggies here to get creative, also it is said to eat the rainbow for the best nutritional value. 

What is sorbet? What is sorbet made of?

Sorbet is a frozen dessert that is made using ice, combined with fruit juice or fruits and other ingredients like sugar, liquor or honey. They are known to be dairy free and a delicious vegan dessert alternatives.

What is a frozen sorbet fruit slice?

Frozen fruit slices are fruit purees that are layered into a loaf tin and frozen. They are sliced and served as a simple vegan summer dessert. You can use any fruits you have leftover to make it but I like using a colorful assortment to create a “rainbow” colored slice once set.

What ingredients do you need to make this frozen sorbet fruit slice?

I have used frozen bananas and lemon juice as my base however I used an assortment of fruits to create the layers. You could add flavors like vanilla, maple syrup to sweeten it up, cardamom or cinnamon powder as well. A touch of salt goes a long way.

Pink –

I used a combination of strawberries and raspberries with bananas to create a naturally pink color. You can add red currants as well. 

Orange –

I used mango and apricots with banana and lemon juice to make a naturally orange color. You can add peaches or gooseberries as well. 

Yellow –

Bananas and lemon juice with orange segments is what I used however make sure the orange is frozen as well or else the layer will be very thin and merge into the orange like it did with mine. You could do a touch of turmeric powder to keep it gleaming yellow in color. 

Green –

I have used avocados, bananas and lemon juice. You could add mint leaves or kiwi to keep the green even more vibrant. 

Purple –

I blended mixed berries with bananas and lemon juice. You can use blueberries on its own as well. Even blackberries work here. 

What equipment do you need to make this frozen sorbet fruit slice?

We need a good blender to puree the frozen fruit. You might need to stop the blender, scrape down the sides with a spatula every now and then. I have layers and set the frozen fruit in a 9 inch loaf tin lined with cling wrap as I wanted to over turn it and slice it. You could use an 8 inch tin as well. You could do this in popsicle moulds or in any tin you have. 

How to make this frozen sorbet fruit slice?

We start by freezing all our fruit, if your fruit is fresh, transfer them to a baking tray or zip lock bag and lay them out to a flat layer, allow them to freeze for a few hours until firm. Get onto lining our loaf tin with cling wrap so we can over turn and slice it. Be generous with the cling wrap. Start by blending the pink layer ingredients until smooth. You might need to use a spatula to scrape down the sides to get it smooth. Don’t be tempted to add more liquid as it will get thin. Pour into the lined tin and smooth out the layer with a spoon, transfer to the freezer until the next layer is ready to be poured over. Repeat the process with the remaining ingredients and keep layering them. Fold over the excess cling wrap on top and place in the freezer for 4-6 hours or until set. 

Serving frozen sorbet fruit slice?

Serve this frozen fruit sorbet by slicing it and serving with toasted flaked almonds or chopped crushed pistachios. I like serving it with a fresh squeeze of lime juice and grated lime zest. It is simple and fresh but pairs well with bubbly as well. You could cut them into squares as well, if slicing or cutting seems too labor some just scoop it into glasses and serve.

Storing frozen sorbet fruit slice?

I like to slice and portion the sorbet, transfer them to air tight containers and store in the freezer for up to 1 month. When needed, remove a slice and serve.

Ingredients
  

Pink layer -

  • 1/4 cup frozen strawberries & raspberries
  • 1/2 banana
  • 1 tbsp lemon juice

Orange layer -

  • 1/4 cup frozen mango & dried apricot
  • 1/2 banana
  • 1 tbsp lemon juice

Yellow layer -

  • 1 frozen banana
  • 3 frozen orange segments
  • 1 tbsp lemon juice

Green layer -

  • 1 frozen avocado
  • 1/4 frozen banana
  • 1 tbsp lemon juice

Purple layer -

  • 1/4 cup frozen blueberries
  • 1/2 frozen banana
  • 1 tbsp lemon juice

Instructions
 

  • We start by freezing all our fruit, if your fruit is fresh, transfer them to a baking tray or zip lock bag and lay them out to a flat layer, allow them to freeze for a few hours until firm.
  • Line the loaf tin with cling wrap so we can over turn and slice it. Be generous with the cling wrap.
  • Start by blending the pink layer ingredients until smooth. You might need to use a spatula to scrape down the sides to get it smooth. Don’t be tempted to add more liquid as it will get thin.
  • Pour into the lined tin and smooth out the layer with a spoon, transfer to the freezer until the next layer is ready to be poured over.
  • Repeat the process with the remaining ingredients and keep layering them.
  • Fold over the excess cling wrap on top and place in the freezer for 4-6 hours or until set.
  • Remove from the tin, take out the cling wrap and slice with a knife sitting in hot water. I like serving it with a fresh squeeze of lime juice and grated lime zest.

Notes

  • Don't skip on freezing the fruit before blending or else the layers will melt into each other like two of mine did.
  • Wash the blender between each fruit layer to keep the colors distinct.
  • Freeze the layers in-between while blending to allow them to set a little before you add the next fruit layer.
  • Slice the fruit sorbet with a knife sitting in hot water - you will get a clean slice.
