Have you ever frozen your leftover lemonade and made popsicles? This is a reminder to do just that. A refreshing sweet treat to be a the heat this summer.
So the beauty about this recipe is that you can use your favourite lemonade recipe to make these popsicles. I have used my go to lemonade which is lemon juice, honey, salt and water. It is simple to make but so delicious and refreshing. The addition of fresh fruit adds more flavor but also add variety to the popsicle.
Lemonade popsicles are popsicles made from lemonade, duh. Either you can make your own lemonade and turn it into popsicles or use your leftover lemonade to make them. Either way, add some fruit and it is delicious.
To make lemonade we need lemons. It must be fresh lemon juice and I like using little lemon zest as well. You can use limes to make this recipe but then it would become a limeade instead. I also like adding lemon zest into the lemonade for a better lemon flavor.
To sweeten the lemon juice you need to add a sweetener. I prefer using honey here but you can use sugar or any other sweetener of your choice.
This might seem stranger but a little salt goes a long way with the lemonade, it balances out the sweetness but also brings out the flavor.
I like adding fresh fruits into the popsicles to add a variety of flavor, you can use strawberries, lemons, oranges, cucumbers or any other fruit you like.
I have used a glass to mix the lemonade together. Also I have use these popsicle moulds to freeze them but any popsicle moulds would work here. To slice the fruit you’ll need a knife and chopping board.
In a large glass, add the freshly squeezed lemon juice, lemon zest, honey, water and salt. Stir well until everything is well dissolved and combined. Pour into popsicle moulds and top with you favorite slices of fruit. Place in the freezer for 6-8 hours until firm. Remove from the moulds and enjoy.
Once these are frozen, I would recommend removing them from the moulds and wrapping with plastic covers. Store in the freezer for up to 3 months. The beauty about this recipe is, you can use up your leftover lemonade to make them.
