Mexican Beef Rice Skillet Recipe

A one pan skillet beef rice recipe that is packed with taco seasoning, peppers, corn, black beans, bakes beans and cheese. The perfect rice bowl recipe that is easy and quick to cook with little effort.

I was inspired to make this recipe all thanks to Half baked harvest. If you do not know her account, now is the time for you to have a look at what she does. I love her content and recipes with all heart and she’s been an inspiration for many years now. This recipe is so good I have made it 3 times in 3 weeks. Once with chicken mince and twice with beef mince. The skillet dish makes it very convenient and so simple to throw together but also you can serve from it directly making it fantastic for a family gathering. Keep the toppings optional and ready to go so when you want to serve it is all laid out. 

My mum loved eating this with hot sauce and dad liked more fresh onion on the top. While I enjoyed it with shredded lettuce, onion, tomatoes, avocado, fresh cilantro and more lime juice. The flavors in the recipe are so comforting wonderfully warming. I used a my homemade taco seasoning recipe which is in the notes of the recipe card. It is not a traditional recipe as I like the addition of garam masala but you can use a store bought seasoning as well. So let us get to the recipe. 

What ingredients do you need to make this beef rice skillet recipe?

To make this dish we need beef mince, red onion, mixed bell peppers, garlic ginger paste, jalapeños (I have used the jar but you can use fresh), taco seasoning, fresh cilantro, sweet corn, baked beans, canned black beans, passata or canned chopped tomatoes, rice – long grain would be ideal here, stock or water is fine, shredded cheese for the top. We also need shredded lettuce, lime, avocado, yogurt, more cilantro, onion, tomato to serve this dish. 

What equipment do you need to make this beef rice skillet recipe?

To make this recipe we need a large skillet and spatula. It needs a fitted lid for the top as this helps cook the rice. Also we finish the recipe in the oven.

How to serve this beef rice skillet recipe?

It is served with shredded lettuce, lime, avocado, yogurt, more cilantro, onion, tomato to serve this dish. You could do hot sauce as well. Essentially this is best served when it comes out of the oven hot. 

Storing the leftovers:

Store the leftovers in air tight containers in the fridge for up to 4 days, making this dish perfect for meal prepping as well. When ready to eat place in the microwave for 1 minute or so until hot and serve with the toppings as needed.

Ingredients

  • 2 tbsp olive oil
  • 500 g mince beef
  • 1 red onion chopped
  • 2 bell peppers chopped
  • 1 tbsp ginger garlic paste
  • 2 tbsp jalapeños
  • 4 tbsp taco seasoning
  • 3 tbsp fresh cilantro
  • 1/2 cup sweet corn
  • 1 can baked beans
  • 1 can canned black beans drained and rinsed
  • 1 cup passata
  • 3/4 cup rice
  • 2 cups water/stock
  • 1 and 1/2 cup shredded cheese cheddar, mozzarella, pepper jack

Serve -

  • Shredded lettuce avocado, fresh cilantro, lime, yogurt

Instructions

  • Preheat the oven to 180 deg C.
  • In a large 10 inch skillet add the olive oil and fry the mince until golden brown on medium heat. Remove the meat from the skillet and transfer to a plate, set aside.
  • In the same skillet add the onions, ginger garlic paste, peppers, jalapeños, fresh cilantro. Sauté for a couple of minutes. Add the meat into the skillet, add the seasoning and stir.
  • Add the corn, baked beans, black beans, rice and stir together. Pour in the passata, water/stock and bring to a boil. Cover and cook for 15-18 minutes until most of the liquid has evaporated and the rice is almost cooked through.
  • Top with the shredded cheese and place in the oven for 10 minutes to finish cooking the rice and melt the cheese.
  • Serve with the the lettuce, avocado, fresh cilantro, lime etc.

Notes

  • Homemade taco seasoning - 1 tsp paprika powder, 2 tsp cumin powder, 1 tsp coriander powder, 1 tsp garlic powder, 1 tsp chipotle powder, 1 tsp black pepper powder, 1 garam masala, 2 tsp salt
  • Use a skillet with a fitted lid to ensure the rice cooks
