Pasta Limone with garlic lemon shrimp

The perfect recipe to end summer. It is fresh and zingy with lemons, parsley, garlic and cream. This pasta Limone is delicious and wonderful with the Garlic shrimp.

Today is officially the last day of summer so it only made sense to write a little poem in form of this recipe to summer. I don’t know about you but my summer was eventful. It included a lot of travel and fun but also a lot of time t introspect before getting into the high spirits of the season (ahem ahem fall, halloween, Diwali and Christmas). How did you spend your summer and what did you cook/eat?

This recipe has to be one of the simplest yet most delicious pasta recipes ever. It is fragrant with lemons and the flavor is luxurious with the addition of cream that mellows down the minced garlic. A handful of freshly chopped parsley brings the dish together but the best past has to be the fresh lemon juice squeezed right on top after cooking. 

What do you need to make this Pasta Limone?

We need pasta, obviously – ideally a long pasta but I have used a short macaroni shaped pasta here. Anything works honestly, it is a very forgiving recipe to say the least. We need lemons (zest and juice), garlic, butter and olive oil for flavor and a rich silk like texture, speaking of rich we also need cream, I have used heavy cream but cooking cream also works fine. But we cook this together with the pasta water to make that lemon sauce. Some seasoning, fresh parsley, parmesan cheese and don’t forget, a little love goes along way in the food. 

I have served this pasta Limone with garlic lemon shrimp cause I love pasta, lemon and shrimp together. Such a yummy combination. We need chopped shallots, garlic, fresh prawns, butter, lemon juice, dry and fresh herbs and seasoning to make this shrimp. You could use chicken or keep the recipe vegetarian and leave out the meat option completely!

How to make Pasta Limone?

Start by cooking your pasta as per the package instructions. While that is cooking we make the lemon sauce, sweet the garlic in the butter and olive oil. We do not want to add color so we keep the heat on low to medium. Add the lemon zest and cook some more. Add some of the cooking liquid from the pasta, cream and bring to a simmer. Add half the parmesan cheese and stir together. The pasta should be cooked at this point, we want to under cook the pasta a little as it will continue to cook in the sauce. Add the drained pasta into the sauce and stir. Finish with freshly chopped parsley, salt, pepper and more parmesan cheese. 

We now make the Garlic lemon shrimp. It takes less than 5 minutes to make (depending on the size of your shrimp). In a sauté pan add the butter, shallots and garlic. Sweat until translucent. Add the shrimp and cook on one side for 1-2 minutes. Add the lemon juice, fresh and dry herbs and Cook on the other side for 1 minute or so. Once the shrimp is cooked you can spoon it over the pasta and serve the dish hot. 

I wouldn’t recommend storing the pasta beyond the day as the lemon juice might make the cream split if you reheat it later. It is a very simple dish but very Harty and scrumptious.

Ingredients
  

  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 2 lemons zest
  • 1/4 cup lemon juice
  • 3/4 cup cream
  • 1/4 cup milk
  • 1/2 cup pasta water
  • 1/4 cup parmesan cheese
  • 2 tsp fresh parsley chopped
  • 300 gm pasta

Optional- Garlic Lemon Shrimp

  • 1 tbsp butter
  • 10 Prawns
  • 2 garlic cloves minced
  • 1/2 onion finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 1 tsp dry herbs thyme
  • 1 tsp lemon juice
  • salt & pepper

Instructions
 

  • Start by cooking your pasta as per the package instructions.

Notes

  • You can keep this recipe vegetarian and leave out the shrimp but I would recommend adding some veggies like corn, yellow zucchini and yellow bell peppers into it.
