Spruced Up Dinner Rolls

These are the best dinner rolls you will make, buttery, soft, fluffy and simple. The buns are topped with a brown butter, pickle, onion seed crumble and mozzarella cheese. 

Honestly, this bread recipe has to be one of the best yet. You barely need to work the dough and the flavors are so good. Savory and sweet with every bite. A simple buttery dough that is rich and indulgent to eat, a perfect thanksgiving side recipe for your menu. Or make it at any time during the week. 

What ingredients do you need to make these Spruced Up Dinner Rolls?

To make the dough we need flour, salt, sugar, yeast (dried yeast), milk, yogurt, butter and baking powder. To make the topping we need butter, onion seeds, sesame seeds, pickles (finely chopped), minced garlic, oregano, crushed black pepper and paprika powder. We also need mozzarella cheese for the top. 

What equipment do you need to make these Spruced Up Dinner Rolls?

You can make the dough by hand in a large mixing bowl but you could also use an electric stand mixer with a dough hook attachment. It would be easier with the machine but it works well by hand  as well. I would recommend purchasing a dough scraper to portion and handle the dough. I used a round ceramic baking dish to make them but you can use any baking tray you have.

How to make these Spruced Up Dinner Rolls?

We start by mixing the yeast, warm milk and sugar in a bowl. Let it sit for a few minutes until frothy. Then add the flour, yogurt, salt and mix until almost combined. If you are doing this by hand it will take 3-4 mins. It will be a sticky dough which is fine. We then start adding our softened butter to the dough and knead further. The dough will take 6-8 mins to come together if you are using a send mixer. Be patient and mix it well. If you are doing this by hand knead it until the dough feels soft and elastic should take 15 mins or so. Cover the dough and let it rise for 1 hour or until doubled in volume. 

Once the dough is risen, portion into 16 pieces and roll them into balls. Nothing precise here, just a little shaping. Transfer them to the baking dish and cover, let them rise for 15 mins or until risen. In the mean time preheat the oven to 180℃ and let us make the crumble topping. In a pan on medium add the butter and cook it on low heat until it starts to foam up, add the minced garlic, sesame seeds, onion seeds and pickles. Cook for a couple of mins longer and take off the heat, add the oregano, paprika and crushed black pepper. Pour this mixture over the risen buns and top it with mozzarella cheese. Bake for 20 mins until golden, risen and done. 

How to serve and store these Spruced Up Dinner Rolls?

I would recommend serving them hot as the cheese will be melting. So you can make them ahead, cover it, place in the fridge and bake when you are ready to serve them hot. Or you could bake them and reheat the buns in the oven just before serving as well. 

I like serving them with some spread cheese or mustard. But they are delicious on their own and make for a very scrumptious side dish during the festive season. Once they are baked you can store them at room temperature in an airtight container for a day or two – however I would recommend placing them in the fridge if you are going to store them longer, they last for 5 days int he fridge. I have also, frozen these buns and warmed them in the microwave when ready to eat. 

My mum loves having them with raspberry jam (I don’t get it but she likes it) and my dad loves it with a little chill and mango pickle. So basically you can serve them with anything. I prefer dipping them in some gravy or snacking on them as they are.

Ingredients
  

Dinner rolls:

  • 180 gm warm milk
  • 50 gm sugar
  • 15 gm yeast
  • 50 gm yogurt
  • 400 gm flour
  • 1/4 tsp salt
  • 85 gm butter softened

Topping:

  • 60 gm butter
  • 4 garlic cloves minced
  • 50 gm pickles finely chopped
  • 1 tsp onion seeds
  • 1 tsp sesame seeds
  • 1/2 tsp dried organo
  • 1/4 tsp crushed black pepper
  • 1/8 tsp paprika powder
  • 60 gm mozzarella cheese

Instructions

Notes

  • Let the dough rise for as long as needed until it is doubled in volume for the first proof.
  • When browning the butter make sure to keep the heat low as we don’t want it to burn.
  • You can measure the cheese with your heart.
