What are cinnamon rolls?

Cinnamon rolls are a sweet pastry made with a buttery brioche like bread dough that is layered with a cinnamon butter, rolled into a log and cut into pieces before baking. Commonly it is frosted with a cream cheese frosting or a simple glaze/icing. 

What is the difference between a cinnamon bun and a cinnamon roll?

A cinnamon rolls is thinner than a cinnamon bun. Also, cinnamon rolls are mostly baked individually but cinnamon buns are baked in a way that they are pull apart – this not a fact before you come for me but I have read it in a few blogs. To be honest the ingredients are the same and the filling is the same as well.the method of making the sweet treat doesn’t change.

A crumble is a baked dessert topping made from a mixture of flour, sugar, and butter that is combined until it forms coarse crumbs. As it bakes, the topping becomes golden, buttery, and slightly crisp, creating a delicious contrast to soft fruit fillings and baked goods. Some crumbles are interchangeable with crisps or streusels as it uses oats and nuts in the mixture. A blueberry crumble is a fruit dessert made with a sweet blueberry filling topped with a buttery crumble mixture and baked until bubbly and golden brown. The juicy blueberries soften as they bake, creating a thick, jam-like filling beneath the crisp topping. Ingredients you’ll need to bake these blueberry crumble cinnamon rolls:

  • For the dough – We need milk, yogurt, yeast, sugar, flour, salt, baking powder, baking soda, melted butter.
  • For the cinnamon butter filling – We need butter, cinnamon powder, brown sugar, heavy cream to bake the buns
  • For the blueberry filling – We need blueberry jam and fresh.frozen blueberries 
  • For the crumble – We need butter, flour, Demerara sugar, oats
  • For the blueberry milkshake glaze -We need blueberry jam, vanilla, cream cheese, heavy cream, powdered sugar 

Substitutions that work with this recipe:

Make these cinnamon rolls with your favorite fruit jam and fresh fruit to customize it, I like doing strawberry to be honest but my strawberry and cream rolls recipe is a wonderful option if you want a sweet roll but don’t want the cinnamon. You can add nuts into your crumble to keep it a little more crunchy as well. Use any vegan/dairy free butter, milk and yogurt but make sure they are flavorless. 

Equipment you’ll need to bake these blueberry crumble cinnamon rolls:

To make the dough we need a large mixing bowl and rubber spatula. I have rolled out the dough with a rolling pin. I use a pizza cutter/sharp knife/floss to portion out the dough and a 9×13 inch tin to bake them. To make the cinnamon butter filling we need a mixing bowl and rubber spatula. To make milkshake glaze we need a blender.

Tips for soft and fluffy cinnamon rolls:

  1. Bloom yeast don’t kill it (make sure the milk is not boiling hot)
  2. Don’t add more flour (the dough will be sticky but adding more flour than suggested might make the buns dense and tough)
  3. Cutting the dough into slices (I like using a pizza cutter to cut the dough into strips and them roll each strip. Or you can roll into a log and cut them using dental floss)
  4. Use correct size pan (this will ensure they bake in the accurate time, also if the pan is small they will over flow while baking)
  5. Rise in peace don’t rush it (allow the yeast to do its thing by letting it rise until doubled – this can take longer depending on the temperature of the kitchen)
  6. Watch out for over baking (once they are golden on the top and have a hollow sound when you knock them they are done baking, if you over bake they can get dry)
  7. Baking soda regulates the dough’s pH, helping it brown in the oven (do don’t skip it please)

Make ahead and storage instructions:

Stir the dough together, cover and let it rest in the fridge overnight, the next morning let it come to room temperature, before rolling, filling and portioning. Alternatively you could roll out the dough, fill with cinnamon butter, blueberries, jam and portion into rolls, place them in the baking tray, cover and place them in the fridge over night (I love this method), the next morning take them out of the fridge and let them proof until doubled while the oven is preheating, pour in 1/4 cup heavy cream before baking as suggested.

These cinnamon rolls can be stored at room temperature in air tight containers for a day, in the fridge for 1 week and in the freezer for 1 month. I would recommend warming them in the microwave for 10-20 seconds before serving. The milkshake glaze can be stored in the fridge for up to 3 days in an air tight container. 

Serving this blueberry crumble cinnamon rolls?

They are best served warm with the blueberry milkshake glaze on top. I would suggest serving them with a glass of milk or coffee but honestly they are delicious on its own. You can serve them for breakfast or brunch. Doesn’t mean you cannot serve it for tea or enjoy it as a midnight snack. I prefer them warm but you can serve it fridge cold as well and they work perfectly.

FAQ:

Why are my cinnamon rolls not fluffy?

This could be because of many reasons, the yeast did not activate (either because the milk was too hot/cold or it has expired), he dough didn’t get enough time to proof (this depends on the weather and temperature, if you live in a colder climate it will take longer to proof, in a hotter and more humid climate it will take lesser time to proof) or you over baked them.

Why are my cinnamon rolls always dry?

They are over baked or the oven temperature is to hot. 

Why did my homemade cinnamon rolls come out hard?

They were over baked and the yeast did not bloom well enough, hence the dough was not proofed long enough.

Do you roll cinnamon rolls tight or loose?

Tight. We always want to roll the dough tight to get clean edges of the cinnamon filling. 

Can I make them vegan or dairy free?

Swap the butter for a dairy. Free butter spread and you are good too go. As for the cream cheese frosting use your favorite cream cheese substitute to make it.

Ingredients
  

For the dough -

  • 1 and 1/2 cup milk
  • 1 tbsp instant yeast
  • 1 tbsp brown sugar
  • 1 cup yogurt
  • 5 cups all purpose flour + 1/2 cup more for rolling
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 cup melted butter
  • 1/2 cup heavy cream for baking

For the cinnamon butter -

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 4 tbsp cinnamon sugar

For the blueberry filling -

  • 1 and 1/4 cup blueberry jam
  • 3/4 cup blueberries

For the crumble topping-

  • 1/2 cup demerara sugar
  • 1/4 cup butter room temperature
  • 1/2 tsp cinnamon powder
  • 1/4 cup flour
  • 1/4 cup rolls oats
  • Pinch of salt

For the blueberry milkshake glaze -

  • 1/2 cup cream cheese
  • 1/4 cup blueberry jam
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla
  • Pinch of salt

Instructions
 

For the dough -

  • Pour the warm milk into a mixing bowl, add the yeast and brown sugar. Stir to combine and allow it to foam up, around 5-10 mins. Set aside.
  • Once frothy add the yogurt and stir well. Add the flour, baking powder, baking soda, salt and melted butter. Stir until you have a sticky dough.
  • Cover and let it rise for 60 minutes or until doubled in volume.

For the cinnamon butter -

  • In another bowl let us make the filling by adding the soft butter, brown sugar and cinnamon powder. Stir together until combined and set aside.

Assemble and bake -

  • Once the dough has doubled in size, liberally flour your clean kitchen counter and roll out the dough with a rolling pin to 9x13inch in height and width approximately.
  • Spread out the cinnamon filling evenly all over the dough. Spread over the blueberry jam and scatter the blueberries everywhere.
  • Using a pizza cutter, portion the dough into 12 strips and roll each slice onto itself creating a scroll and using a brush dust off any excess flour the dough has picked up while rolling.
  • Transfer to a baking tray. Cover and let the dough rest for 15 minutes, in the mean time preheat the oven to 180 deg C.
  • Once the dough is risen, and oven is preheated, pour over the heavy cream and bake for 28-30 minutes or until golden and puffed up. Remove from the oven and let sit for a few minutes before serving as the jam can be very hot.

To make the blueberry milkshake glaze -

  • Blend all the ingredients together until smooth, place in the fridge until needed.
  • Drizzle the rolls with the glaze and serve.

Notes

  • Let the dough rise until doubled before rolling out and shaping, this could take longer depending on the temperature of your kitchen.
  • Use your favorite blueberry jam to ensure these rolls are delicious
