These are favorite homemade mango recipes that are easy to prepare and perfect for summer. They include inspiration from seasonal recipes that I love, they are quick, simple, tropical and mainly delicious.
When may rolls around, mangoes are the only fruit I am searching for. They are my favorite fruit but I must admit, I love Alphonso mangoes, they are the BEST! They are known as the king of mangoes, often known as Hapus in India – it is the royalty of mangoes, knowns for its rich, buttery and fruity flavor. They have a deep aroma that ill fill the house like a scented candle. They come around this time of the year and I remember growing up, my mum would buy them fresh and freeze the pulp for smoothies and recipes later in the year. They mainly come from the state of Maharashtra and can be found in regions of Ratnagiri, Devgad and Sindhudurg.
Having said this, I have had the opportunity to work with MangoDxb and try out some of the many other varieties which are so unique and delicious in their own light. This blog is an ode to those mangoes. They are such a versatile fruit which works well with a lot of desserts not just as an accompaniment but also as an ingredient. They are also perfect to add into savory recipes for a natural kick of sweetness and hint of fruitiness.
You would most likely see mangoes being used in smoothies, juices, breakfast bowls, desserts like mousse, cheesecake and cakes. Today there are a lot of creative desserts such as the mango-misu which is a layered mango dessert with mango lady finger sponge biscuits and cream, mango bingsu which is a Korean dessert that works so well for the hot summer months. Mango ice cream and sorbet are every where today and you can even find them all through the year.
Mango is one of those fruits that works well in savory recipes like a fresh mango salsa with tortilla chips and grilled shrimp, a mango coconut fish curry is so delicious too. You can find mangos paired with grilled bbq chicken and pork as well. I personally love mango with seafood – I think it pairs perfectly well with each other. If you are looking to add a layer of freshness to your salads then mango is the way to go – don’t be shy and think it won’t work, trust me it does.
