Single Serve Eggless Brookie Cookie – Brownie & Chocolate Chip Cookie for One (a la mode)

This single serve eggless brookie cookie combines fudgy brownie batter with a chewy chocolate chip cookie in one easy dessert. Serve it warm with vanilla ice cream and flaky sea salt for the ultimate brookie à la mode.

If you have ever found yourself standing in the kitchen trying to decide between making a brownie or a chocolate chip cookie, I have a solution for you: make a brookie. And because I am very much a believer that dessert does not always need to make twelve portions, this one is a single serve eggless brookie cookie. One dessert, one little baking tray, two of my favourite desserts combined and absolutely no need to make an entire batch. This recipe is a nod to the viral warm cookie a la mode recipes that have been all over the internet lately which I posted about recently. But I wanted to combine both a cookie and a brownie to create the ultimate indulgence. A brookie is essentially what happens when a fudgy brownie and a chewy chocolate chip cookie meet in the middle. You get the richness and chocolate intensity of a brownie with the buttery, caramelised edges of a cookie. It is basically the best of both worlds. I wanted to take the idea from my single-serve warm cookie and ice cream recipes and turn it into something even more indulgent. Instead of choosing between my chocolate chip cookie and brownie batter cookie, why not put them together? The result is a warm, gooey, eggless brookie cookie that is crisp around the edges, soft in the middle and packed with chocolate. And because I cannot resist turning a warm cookie into a full dessert situation, I like serving mine with a generous scoop of vanilla ice cream and a sprinkle of flaky sea salt. 

The ice cream melts over the warm brookie, finding all those little pockets of chocolate and turning the whole thing into a fudgy, creamy, slightly salty dessert that is incredibly difficult to share. And honestly, I don’t think you should. Hence the single serving. So let us get to it.

What is a Brookie?

A brookie is a combination of a brownie and a cookie. The name itself comes from putting the two words together: brownie + cookie = brookie. Traditionally, brookies are made by layering brownie batter and chocolate chip cookie dough in a baking pan before baking them together. You get a brownie layer, a cookie layer and all the delicious textures that come with both. But brookies do not have to be made in a large baking pan. What I love most about a brookie is the contrast in textures. A brownie should be rich and fudgy, while a good chocolate chip cookie should have slightly crisp edges with a soft, chewy centre. When the two are baked together, you get something that is somewhere between a cookie and a brownie. For this version, the brookie has an eggless chocolate chip cookie dough paired with an intensely chocolatey brownie-style dough. Both components are made in small quantities, so there is no need to crack an egg and wonder what to do with the rest of it. That is one of my favourite things about making single-serve desserts. They are practical without feeling like you have compromised on the dessert itself.

And if you are someone who loves the combination of warm cookie and ice cream, this is probably going to become a favourite. The brookie comes out of the oven warm and soft, the chocolate is still slightly melted and the centre is beautifully gooey. Add vanilla ice cream on top and suddenly your simple little cookie has become a proper dessert.

What are Single Serve Recipes?

A single serve recipe is essentially a recipe designed to make one portion, rather than a large batch. I have really grown to love single-serve baking because sometimes you do not need a dozen cookies sitting on the counter. Sometimes you want one warm dessert, right now.

There is something especially satisfying about making exactly enough for one. No leftover dough taking up space in the refrigerator. No tray of cookies tempting you for the next few days. No need to find someone to share the dessert with because the recipe was designed around one serving from the beginning. This single serve brookie cookie is perfect for those moments when you want something sweet after dinner, need a quick dessert for one or simply want to bake something without committing to a full recipe. It is also why I love keeping recipes like this in my back pocket. The ingredients are simple, the quantities are small and the preparation does not require any complicated baking techniques. And because this is an eggless brookie, you do not need to use an egg yolk just to make one cookie. The cookie component gets its softness from the butter and yogurt, while the brownie component gets its rich texture from chocolate, cocoa and the simple combination of the remaining ingredients. There is something very comforting about a dessert that can go from craving to oven in a matter of minutes. This is not a recipe I would make when I want to spend an afternoon baking. This is the recipe I make when I suddenly realise I need chocolate. Immediately.

What Ingredients are Needed?

The ingredient list for this eggless brookie cookie recipe is intentionally simple. Since you are making a small batch, you do not need a long list of ingredients or anything particularly difficult to find. You are essentially making two small components: a chocolate chip cookie dough and a brownie-style cookie dough.

  1. For the chocolate chip cookie side, you will need butter, brown sugar, caster sugar, yogurt, all-purpose flour, baking soda, salt and chocolate chips. I particularly like using brown butter here if I have a few extra minutes. Browning the butter gives it a gorgeous nutty, caramelised flavour that makes the cookie taste much more complex. You can absolutely use melted butter too, but brown butter is one of those tiny extra steps that I think makes a noticeable difference. Brown sugar is important because it gives the cookie that lovely caramel flavour and helps keep the texture soft and chewy. Caster sugar adds sweetness while also helping with the texture. The yogurt is particularly useful in an eggless cookie recipe because it adds moisture and helps bind the dough together without needing an egg. Then there is chocolate. I am always going to recommend using chocolate that you genuinely enjoy eating. You can use chocolate chips or chop up a chocolate bar into chunks. Personally, I love the irregular chocolate pools you get when using chopped chocolate because some pieces melt into the dough while others remain as little pockets of chocolate.
  2. For the brownie side, you will need dark chocolate, oil, caster sugar, water, all-purpose flour, cocoa powder, baking soda and salt. The combination of melted dark chocolate and cocoa powder is what gives this side of the brookie that deep chocolate flavour. It is richer and more intense than the cookie dough, which is exactly what we want. I like using unsweetened cocoa powder and dark chocolate here because the cookie dough already brings sweetness to the dessert. And please do not underestimate the salt. A small pinch goes into the dough, but I also love finishing the baked brookie with flaky sea salt. Chocolate and salt are one of those combinations that just works, and the little flakes cut through the sweetness beautifully.

What Equipment is Needed?

The best part about this single serving dessert is how little equipment you need. You do not need a stand mixer, electric whisk or food processor. In fact, I would avoid bringing out anything remotely complicated for this recipe. All you really need is a couple of small mixing bowls, a spoon or rubber spatula, a baking tray and baking paper. You will also need an oven preheated to 180°C. If you are browning your butter for the cookie dough, you will need a small saucepan as well. This is completely optional, but as I mentioned earlier, I really love the extra flavour it brings. For serving, I recommend having an ice cream scoop nearby because the moment that brookie comes out of the oven, you want to be ready with your vanilla ice cream. The equipment list is one of the reasons I love making single-serve recipes. There is something so satisfying about being able to mix everything by hand, pop it into the oven and have a warm dessert without creating a mountain of washing up.

How to Serve the Brookie à la Mode?

If you have never heard the phrase before, “à la mode” simply means serving a dessert with ice cream. And when it comes to this single serve brookie cookie, vanilla ice cream is my first choice. Take the brookie out of the oven while it is still warm and immediately add a scoop of vanilla ice cream on top. The cold vanilla ice cream starts melting into the warm chocolate cookie and brownie layers. The edges stay slightly crisp while the centre becomes even more fudgy and creamy. Finish it with a generous sprinkle of flaky sea salt. But if you are feeling particularly indulgent, you can add a drizzle of chocolate fudge sauce, salted caramel or melted peanut butter. A little Biscoff spread would also be delicious. You could add extra chocolate chips, chocolate shavings, toasted hazelnuts or crushed cookies for some texture. But my personal favourite is keeping it simple.

Storing the Brookie Cookie?

Technically, you can store the brookie cookie, but this is one of those desserts that I really think is best eaten fresh. The whole appeal of this recipe is that it is a single serve warm dessert. It is designed to be baked and eaten immediately, ideally with the ice cream melting over the top. If you do have leftovers, allow the brookie to cool completely before placing it into an airtight container. It can be kept at room temperature for a short period, or refrigerated if you want to keep it for longer. When you are ready to eat it, warm it gently in the microwave or oven until the centre is soft again. Most importantly, do not add the ice cream until you are ready to serve. If you want to prepare the brookie ahead of time, you can also prepare the dough and keep it covered in the refrigerator until you are ready to bake it. But honestly, because this is a brookie for one, I would make it fresh. That is the beauty of a single-serve recipe. You get to decide when you want dessert and make exactly enough for that moment. There is no waiting for a whole batch to cool. No leftovers that need to be stored. No complicated recipe to follow. Just a warm, chocolate-filled eggless brookie cookie, straight from the oven, waiting for a scoop of vanilla ice cream.

Pro tips on making the perfect brookie cookies:

  • Don’t over mix the brownie batter with the cookie dough’s we want to see the chunks of cookie dough while also enjoying the brownie batter.
  • Don’t over bake the cookies – this is the most important tip I can give you. The cookies only need 7–9 minutes at 180°C. They might look slightly underbaked when you take them out, but that is a good thing. They will continue to cook slightly on the hot baking tray. Remember, we’re making a warm cookie specifically so that the centre stays soft and gooey.
  • Brown the butter – for the chocolate chip cookie. If you have an extra couple of minutes, brown your butter. It adds a gorgeous nutty, caramelised flavour that takes the cookie from simple to seriously delicious.
  • Use good chocolate – since you’re only making two brownie cookies, you want the chocolate to count.
  • Chocolate chips/chunks – use chocolate chips or chop up your favourite chocolate bar into chunks. Those little pools of melted chocolate are exactly what we’re looking for.
  • Eat it warm – this isn’t the kind of cookie I recommend baking, cooling completely and saving for tomorrow. The whole point is warm cookie + cold ice cream. Have your ice cream ready before the cookie comes out of the oven.
  • Finish with flaky sea salt – I know I’ve mentioned this several times, but it’s worth repeating. A little flaky sea salt cuts through the sweetness and makes the chocolate flavour even more intense. It also gives you that gorgeous sweet-and-salty combination that makes you want another bite.

Ingredients
  

For the brownie cookie batter -

  • 2 tbsp dark chocolate melted
  • 1 tbsp oil
  • 2 tbsp + 1 tsp caster sugar
  • 1 tbsp + 1 tsp water
  • 2 tbsp flour
  • 2 tsp cocoa powder
  • ⅛ tsp baking soda
  • Pinch of salt

For the chocolate chip cookie -

  • 2 tbsp melted butter or browned butter
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tbsp yogurt
  • 5 tbsp all purpose flour
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3 tbsp chocolate chips
  • Sea salt flakes for the top

Instructions
 

For the brownie cookie batter -

  • Preheat your oven to 180°C and line a baking tray with baking paper. Melt the dark chocolate and allow it to cool slightly.
  • In a small bowl, combine the oil, caster sugar and water and whisk well until emulsified around 2-3 minutes. Add the melted chocolate and whisk again.
  • Add the flour, cocoa powder, baking soda and salt and mix until you have a thick brownie batter.

For the chocolate chip cookie dough -

  • Add the browned butter, brown sugar and white sugar into a small bowl and stir until dissolved. Add the yogurt and stir together until combined and thick.
  • Add the flour, salt, baking soda and chocolate chips. Stir until combined. Do not over mix. Divide the dough in half.

Assembly -

  • Take half the cookie dough and break pieces into the brownie batter bowl, fold together briefly - no not over mix.
  • Scoop out 4 balls from the dough and top with the remaining half of the cookie dough chunks.
  • Bake for 7-9 minutes until the edges are crisp and firm but the center is soft and molten.
  • Using a metal spatula slide it over the vanilla ice cream scoops and top with sea salt flakes.

Notes

  • Measure the ingredients well
  • Do not over mix the cookie dough into the brownie batter
  • Do not over bake the cookies
