This easy strawberry sheet cake is bursting with fresh strawberries in the cake batter. A simple but yummy strawberry jam in the frosting and between the layers. Finished with a cute piping of strawberries on the outside. The cutest summer cake to bake for any occasion.
This eggless strawberry sheet cake is soft, moist, and bursting with fresh strawberry flavor in every bite. Made from scratch with simple pantry ingredients and juicy strawberries, this easy one-pan cake is perfect for birthdays, potlucks, summer gatherings, or whenever you’re craving a fruity homemade dessert. Even without eggs, the cake bakes up light, fluffy, and incredibly delicious. It is no secret that I love a good sheet cake, this is my 6th recipe and I do not intend on stopping any time soon.
Speaking of recipes that I love, I absolutely love a good fruit dessert in summer. It is so fresh and delicious but also uses what’s in season making it taste even better. Having said this, I also prefer using frozen fruit in some my fruit cakes as – most fruit that is frozen is frozen while it is at its peak point of being ripe. Which means you get some of the most delicious fruit in frozen bags but the down side with this is it retains a lot of moisture and adds more liquid into your desserts unless handled properly. That why I like making a compote/jam here to help maintain the liquid content in it. As for the frosting – it is so creamy, fluffy and light, just like pudding.
The cake is light and fluffy with little to no effort from your side. It is the perfect afternoon tea cake situation that looks very elegant but also tastes delicious. I would recommend adding chopped strawberries into the cake layers for more strawberry vibes. Also, I have layered the cake here but you can serve it as a sheet cake as well making it easy to transport for a party cake dessert that is perfect to feed a family. This strawberry dessert is so fresh, easy and uses minimal ingredients but leaves you with a bakery style cake. So lets get to the recipe.
A sheet cake is a cake baked in a large, shallow rectangular pan rather than in round cake pans. It’s usually a single-layer cake that is frosted and served directly from the pan or transferred to a serving tray. However this case we turned the sheet cake in to a layered cake (which is optional).
I have used frozen strawberries that I thawed and then used as needed in this recipe. The fresh strawberries were 4 times the price and I wanted to make this cake as it is very seasonal right now and I was craving it. You can use fresh as well which would work perfectly in this dessert.
To make the cake we need a couple of mixing bowls, whisk and rubber spatula. It is baked in a quarter sheet pan lined with baking paper. The compote is cooked over the stove in a sauce pot with the help of a spatula, it is then blended into a puree and cooled completely. For the frosting we cook the flour sugar and water in a sauce pot before beating with the butter using an electric beater. To pipe the strawberries use a piping bag.
Always start with the component that will take the longest to make and cool. In this cake we start with the cake, make the cake batter and bake it so we can allow it cool as needed. While that is happening we get on with the compote/jam. This is cooked until thick and bubbling, after which we blend it until smooth. At this point you can add freshly chopped strawberries into the mixture. Let it cool completely before using. Get on with the frosting and use the compote to flavor it. You have two options on the decorating part, either serve the cake in the sheet pan (as most sheet pan cakes are) or you can stack it up and layer the cake like I have and pipe on mini strawberries.
Slice the cake and place in air tight containers, store in the fridge for 3 days. I wouldn’t recommend freezing this cake as the frosting doesn’t de frost well. You can make the cake and compote ahead to keep the assembly easy. The cake on its own will freeze well for up to 3 weeks wrapped in cling wrap and then placed in an air tight container.
