If you’ve been around here for a while, you already know I love a good brownie or a cookie recipe. I have so many recipes and variations on the blog. So when I finally got around to making slutty brownies (yes, that’s really what the internet calls them, and no, I’m not going to pretend otherwise and also no I didn’t give them this name). Now I must admit, I have been baking these brownies for over 10 years and some how, I have not shared my version of this recipe till date which is terrible of me, I take ownership of this. Also when I did my dessert pop up in Bombay a couple of years ago – this item was one of the recipes we had on the menu because that’s how much I love it. 

It is an indulgent treat to say the least, with a chewy and chocolate chip cookie layer, stacked with  Oreos and topped with an intensely fudge brownie batter on top. It is has the best of both worlds, brownies, cookies, Oreos in every single bite and trust me you do not need anything more than that, I love it on its own without the addition of ice cream, whipped cream or anything else. Make it for a birthday, a bake sale, or just because you deserve something ridiculous this weekend. So let us get to it.

What Are Slutty Brownies?

Slutty brownies are a viral American dessert bar made from three distinct layers baked together in one tin: a cookie dough base, a full layer of Oreo cookies, and brownie batter poured on top. As it bakes, the Oreos soften into the cookie dough below and the brownie above, so every bite gets a bit of chew, a bit of crunch, and a whole lot of fudge.

What Ingredients Do You Need?

  1. For the cookie base – This layer is a brown butter and olive oil cookie dough that’s chewy at the edges and soft in the centre. You’ll need brown butter, a touch of olive oil, brown and white sugar, vanilla, flour, cornflour, baking powder, baking soda, salt and chocolate chips. The brown butter is what gives the base that nutty, slightly caramelised flavour, so don’t skip browning it.
  2. The Oreo layer – A single layer of whole Oreo cookies, laid flat, edge to edge, across the cookie base. Regular Oreos work best here since the filling melts into the brownie batter as it bakes and adds little pockets of cream in every square.
  3. For the brownie top – This includes dark chocolate and butter, melted together with a little espresso powder to deepen the chocolate flavour. Whole eggs beaten with brown and white sugar until pale, thick and doubled in volume is what gives this brownie its glossy, crackly top once baked. Flour, cornflour and cocoa powder go in next.

What Equipment Do You Need?

A 9×11 inch baking tin, lined well with baking paper since you’ll want to lift the entire slab out cleanly once it’s cooled. You’ll need two mixing bowls, an electric beater for the brownie eggs (or a whisk to beat the eggs and sugars together until pale and creamy – this is non-negotiable if you want that shiny, crackly top), a whisk for the cookie dough, a rubber spatula for folding, and a sharp knife for slicing once everything has cooled completely.

Pro Tips for the Best Slutty Brownies:

  • Beat the eggs properly – this is what gives the brownie layer its shiny, crackled top, so don’t rush this step.
  • Don’t skip lining the tin – with three layers stacked on top of each other, you want a clean release, and baking paper with overhang makes that effortless.
  • Underbake rather than overbake – the brownie layer will continue to set as it cools, so pull it out when the centre is still slightly wobbly and jammy.
  • Cool completely before slicing – I know the smell will have you reaching for a knife immediately, but let it cool for at least two hours, and pop it in the fridge for the last thirty minutes for the cleanest slices.
  • Use a hot, dry knife – wipe your knife between cuts and warm it slightly under hot water for bakery-style clean edges through all three layers.

Storing Your Slutty Brownies:

Store leftovers in an airtight container at room temperature for up to three days, or in the fridge for up to a week. These also freeze beautifully for up to a month; just wrap individual bars and thaw at room temperature, or give them a quick ten to fifteen second zap in the microwave before serving warm with a scoop of ice cream.

Frequently Asked Questions

Can I make slutty brownies without eggs?

Yes, simply swap the eggs for flaxseed eggs, one flaxseed egg is 1 tbsp flaxseed powder mixed with 2 tbsp water, set aside to form a gel like consistency before using as the recipes suggests.

Can I use a boxed brownie mix or cookie dough instead?

You can, though I’d always recommend making both layers from scratch for the best texture and flavour.

Why is my brownie layer taking longer to bake than expected?

Three layers stacked together means more mass to cook through, so always start checking from the lower end of the bake time and go by the toothpick test rather than the clock alone.

Can I make this gluten free?

Yes, swap the flour in both the cookie and brownie layers for a cup-for-cup gluten free flour blend.

Ingredients
  

Cookie base -

  • 56 g brown butter
  • 56 g cup olive oil
  • 110 g cup brown sugar
  • 110 g cup white sugar
  • 1 tsp vanilla
  • 60 g cup water
  • 250 g flour
  • 1 tbsp corn flour
  • 1/2 tsp salt
  • 150 g chocolate chips
  • 1 packet Oreos

Brownie base -

  • 230 g dark chocolate
  • 230 g salted butter
  • 1 tsp espresso powder
  • 4 eggs
  • 215 g brown sugar
  • 198 g castor sugar
  • 1 tsp vanilla
  • 2 tbsp cocoa powder
  • 130 g flour
  • 1 tbsp cornflour
  • 1/2 tsp salt

Instructions
 

Cookie -

  • In a mixing bowl add the brown butter, olive oil, brown sugar, white sugar until smooth. Add the vanilla and water, whisk again until combined, this might take a minute or two.
  • Add the flour, baking powder, baking soda, corn flour, salt and fold together with a rubber spatula. Add the chocolate chips into the dough and fold together. Set aside.

Brownie -

  • Melt the butter, dark chocolate in a bowl in the microwave with 20 second intervals. Stirring between each interval. Once melted and smooth, add the espresso powder into the mixture, stir and set aside to cool.
  • In a large mixing bowl add the eggs, sugars and vanilla, using an electric whisk beat the mixture until it has doubled in volume, creamy, pale and fluffy, round 2 minutes. Add the melted butter and dark chocolate mixture, beat until combined and smooth.
  • Sift over the flour, cornflour, cocoa powder, salt and fold with a spatula.

Assembly -

  • Preheat the oven to 180℃. Line a 9x11 inch tray with baking paper and set aside.
  • Layer the dough into the lined tin, flatten it out with the back of a spoon or rubber spatula.
  • Add the Oreos in a single line and cut pieces to fill in the gaps.
  • Pour the brownie batter over the Oreos, bake for 30-32 mins until the top is set and a tooth pick inserted into the center comes out with sticky, wet crumbs.
  • Let this cool for a couple of hours in the fridge. Remove it from the tin, cut into squares and enjoy.

Notes

  • The longer you bake the brownie the less fudgy it will be.
  • Allow it to cool completely before slicing or else you won’t be able to get clean edges.
  • I like topping them with flakey sea salt once done.
